Perfect Red Skin Potato Salad




So it's been a minute or actually a month or more...Things have been crazy round these parts. Life sometimes just takes a turn and you have to scale back to make other things happen. I won't be gone forever just need to catch up. I will still be posting every Thursday for Thursday Favorite Things Link Party. So today here is a perfect summer dish!

Perfect for you summer cook out's is this dish right here. I don't think I have ever went to or had a bbq without some type of potato salad. This particular version and there are quite a few versions out there, has hard boiled eggs. Sounds like a weird addition right? Trust me its not. This is my grandmothers recipe and shes been making it forever. She even made it on Easter Sunday along side her famous baked ham. Now that went well together.

Ingredients
2 pounds clean, scrubbed new red potatoes
6 eggs
1 onion, finely chopped
1 stalk celery, finely chopped
2 carrots grated
2 cups mayonnaise
1 teaspoon cider vinegar
1 teaspoon dijon mustard
salt and pepper to taste
green onion for garnish

Directions
Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and set in the refrigerator to cool.

Place eggs in a saucepan and cover with cold water. Bring water to a boil and immediately remove from heat. Cover and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, cool, peel and chop.

Chop the cooled potatoes, leaving skin on. Add to a large bowl, along with the eggs, onion and celery and carrots. Add mayonnaise, vinegar and mustard mix well to coat. Add salt and pepper to taste. Chill for an hour before serving. Garnish with green onion.
