Cajun Spiced Pretzel Crusted Chicken Tenders

Happy Monday! We eat a lot of chicken in our house. So I am always looking for new ways to make it. Since the kids love chicken tenders and fingers I decided to play a little trick on them. 


I did not tell them that these were pretzel coated. I let them gobble them up.
Then told them if they noticed anything different. 


They said they were much more flavorful and crunchy. They absolutely loved them!
I am all about trying new things in the kitchen and this one was a win. The addition of the cajun seasoning made it that much better.

Ingredients
2 cups pretzels, any kind
1 cup Panko-style bread crumbs
2 tablespoons cajun seasoning (I make my own)
3/4 cup flour
1 additional tablespoon cajun seasoning
3 pounds chicken tenders
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
2 eggs

Directions
In a food processor add the pretzels, panko and 2 tablespoons of the cajun seasoning. Pulse until you have a fine mixture. Add the mixture to a pie plate or shallow dish.

Add the flour to a pie plate or shallow dish and whisk in the additional tablespoon of the cajun seasoning. Beat the eggs in an additional bowl or dish.

Salt and pepper the chicken tenders. Coat each tender with flour, egg and then press into the pretzel panko mixture ensuring they are coated well. Continue with the remaining tenders.

In a cast-iron skillet or other heavy skillet, add just enough oil so the tenders are not submerged. Bring oil to 350°F over medium heat. Using tongs, place chicken into oil one piece at a time, leaving at least an inch between each piece so you have enough space to flip them. Fry for 5-7 minutes per side. Season with salt and pepper while chicken is hot. Remove from pan and place on paper towels to drain the grease. Serve with your favorite dipping sauce. I used honey mustard.
