Meatball Parmesan Sammies



Happy February! Is everyone ready for the big game next weekend? We aren't big sports watchers in our house. It's  more about the food. All that yummy food. Snacks, dip, wings, sandwiches and more! I can hear the pounds creepy back on. One day to cheat is OK right?

This sandwich right here is perfect for the big game day menu. Who doesn't love meatballs tomato sauce and melted mozzarella? Especially when it's on toasted garlic bread!

Ingredients

1 pound ground beef

1/3 cup Italian-seasoned breadcrumbs
1/4 cup shredded Parmesan cheese 
3 tablespoons milk
1 large egg 
1 tablespoon grated onion 
2 garlic cloves, minced
4 tablespoons fresh chopped parsley
1/2 teaspoon salt 
1/4 teaspoon pepper 
3 cups of your "go to" tomato sauce
6 slices, kaiser, brioche rolls
4 tablespoons butter softened
1 clove garlic, minced
6 (1 ounce) slices fresh mozzarella or 1½ cups shredded mozzarella

Directions

Combine first 10 ingredients; shape into 1-inch balls (golf ball size).

Brown meatballs in a large skillet over medium heat; drain. Wipe skillet clean with a paper towel.

Add tomato sauce. Cook over medium heat, stirring often, 5 minutes. Return meatballs to skillet; cover and cook, stirring occasionally, 15 minutes or until meatballs are no longer pink. . 

Mix the garlic and the butter together. Spread the butter on each half of the rolls. Heat a large nonstick skillet to medium heat and add the as many of the rolls that will fit butter side down and cook until golden brown (like grilled cheese). Repeat until the remaining halves of the rolls are toasted. Top each bottom of the roll with meatballs, top with mozzarella and the top of the roll. Serve hot.
