Cheesy Broccoli Brown Rice


 Happy New Year! I hope everyone had a wonderful holiday season. I am so happy to have things back to normal. Whatever that may be (ha ha).  This side dish is a perfect addition to any main dish. What is it about broccoli and cheese that makes them go so well together?


For this dish I chose brown rice for a healthier option since I was adding cheese. I mean who doesn't love cheese? I may have a slight obsession. 


I have seen this dish coated in cream of whatever soup and then baked like a casserole. This version is cooked on the stove top and uses no cream of whatever out of the can.  It could not be any easier to make.

Ingredients
4 cups fresh broccoli cut into bite sized pieces
2 cups cooked brown rice
3 tablespoons butter
1 small onion, diced
1/2 cup milk
1/4 teaspoon each garlic & black pepper
1/2 teaspoon dry mustard powder
salt to taste
3 tablespoons parmesan
2 cups shredded cheddar cheese

Directions
Cook onion and butter on medium-low heat until softened and translucent. Stir in garlic powder and pepper. Cook an additional 2 minutes.

Gradually pour in milk while whisking. Continue whisking over medium heat until thick and bubbly. Remove from heat and add dry mustard, parmesan cheese, cheddar cheese and salt. Stir until melted.

Place broccoli in boiling water for about 4 minutes. 

Stir together rice, broccoli and cheese sauce and serve.

  4. This sounds perfect! I love the no cream of soup, although we just started using cream of soup again, but using an organic brand that doesn't have all that funky list of ingredients. I would toss in some shredded chicken and make this a one dish dinner! Thanks for linking up with us over at The Wednesday Showcase Party this week!
