Penne with Creamy Chicken and Veggies {Barilla Gluten Free Pasta}

Once a month I do my bulk shopping at my local BJ's Wholesale club. They have everything I need including  Barilla® Gluten Free Pastas. There seems to be a lot of issues around gluten these days. Well it did not dissapoint. Barilla® Gluten Free Penne has a delicious taste and texture. It really does tastes like regular pasta. You would never know it was gluten free by being made with corn and rice. This gluten free pasta recipe came out delicious. Cheese vegetables  chicken in a light cream sauce over penne. Nom Nom!

Ingredients
12 oz. Barilla Gluten Free Penne 
2 tablespoons olive oil, divided
4 cloves garlic, minced
1 bell pepper, seeded and chopped
1 small onion , chopped
1 cup broccoli flowerets
1 lb chicken breast, chopped into chunks
1/2 teaspoon garlic powder
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/2 teaspoon salt
2 roma tomatoes, seeded and chopped
1-1/2 cups half & half
2 tablespoons light cream cheese
1/4 cup parmesan cheese, grated
more parmesan cheese for garnish

Directions
In a large Dutch oven or stock pot, boil water and cook the pasta. Drain, rinse with cold water and set aside in a bowl.

Add 1-1/2 tablespoons of olive oil to the same pan that you cooked the pasta in. Over low heat, cook the garlic, pepper, onion and broccoli until onion is translucent remove from the pan, set aside in a small bowl. 

Add the remaining oil and turn the heat to medium. Season with garlic powder, black pepper, red pepper flakes and salt, cook the chicken throughout. 

Add tomatoes, the half & half and cream cheese to the pot. Bring the mixture to a low simmer. Add the parmesan and stir until smooth, then return the cooked vegetable mixture and pasta to the pot. Stir gently coating  the pasta evenly and serve immediately. Garnish with extra cheese.
