Skillet Spinach and Artichoke Dip


You need this dip in your life, I promise. Then once you have it you will want it. For years I have baked this dip in the oven. Why I haven't a clue. Making it in a skillet is they way to go from now on. With it being sports season and all the games on TV this is the perfect dip for game day fun. Happy Friday!

Ingredients
8 ounces light cream cheese
16 ounces light sour cream
1/2 stick or 4 tablespoons butter
2 cups shredded parmesan cheese
1 cup shredded mozzarella 
1-14 oz can artichoke hearts, drained and chopped
1- 10 oz package chopped frozen spinach, defrosted and drained
2 cloves garlic, grated

Directions
In a medium pot over medium heat, melt together cream cheese, sour cream, butter, 1/2 of the mozzarella cheese, and parmesan cheese, stirring frequently until melted and an even consistency. It should start to bubble.

Stir in chopped artichoke hearts, spinach and stir in 2-3 pressed garlic cloves. Top with remaining mozzarella and broil until mozzarella melts and is hot and bubbly.

Serve hot with chips, crackers, pretzels, pita chips or toasted baguettes.
