Grilled Cafe Rio Chicken Sliders

Remember this dressing from the other day? Well this is what I used it for! Normally you see Cafe Rio's Chicken shredded. Which by the way is amazing! But I wasn't into the shredded chicken kind of mood so I marinated the chicken breasts in the sauce for hours and then grilled them. Well the came out as expected delicious!

On another note...I have exciting news!!! Starting next Thursday 9/10/15 I will be one of the new co-hosts for Thursday Favorite Things Blog Hop! Every Thursday 1 party, 8 Blogs, you can link up your favorite things. Recipes, DIY, Home Decor, Crafts, Style, Family Faith and More!!! Be sure to come on by and link up your favorite things!!

Ingredients
4 boneless skinless chicken breasts, each one cut in half
salt and pepper
8 oz. zesty italian dressing
½ tablespoon minced garlic
1 packet ranch dressing mix
½ tablespoon chili powder
½ tablespoon ground cumin
1/2 teaspoon kosher salt

monterrey jack cheese
8 slider buns toasted
lettuce
tomato

Directions
Season the chicken on both sides with the salt and pepper and place in a zip lock bag or sealed container.

Mix the italian dressing, garlic, ranch dressing mix, chili powder, cumin, and kosher salt together and pour over the chicken.

Place in the refrigerator and let marinate 6 hours.

Remove from marinade and grill on high heat 7-8 minutes per side or until 180 degrees.

Place one slice of cheese on each chicken breast to melt then place each cut and cooked breast on each slider bun. Top with dressing, lettuce and tomato.
