Cafe Rio's Creamy Tomatillo Dressing



School has officially started and my house is quiet! I am not going to lie I am happy to have my routine back. Mainly my blogging routine! I am sure you have seen this recipe on Pinterest like a billion times but it is just so delicious I had to share it with you.





We do not have a Cafe Rio here in NY. Every copy cat recipe of theirs I have tried has been absolutely delish! This is being of them. Like I could literally drink it! It's good for salad, taco's, pork, beef, chicken whatever! Cool buttermilk ranch, zesty tomatillos, cilantro and a jalapeno kick oh man it's so good!!! Stay tuned for what I used it for.

Ingredients
1 package Hidden Valley Ranch Dressing Mix
1 cup buttermilk
1 cup mayo
⅓ cup water
2 medium-sized tomatillos, husked and chopped
½ cup packed cilantro leaves, roughly chopped
1½ teaspoons minced garlic
1 small jalapeño, seeded and finely diced
1½ teaspoons lime juice


Directions
Add all ingredients to your food processor blender and pulse 2-3 minutes until smooth and creamy. Chill at least one hour before use and store in fridge in airtight container.

  3. I LOVE tomatillo salsa but I've never made it ... or anything with tomatillos from scratch. This dressing looks absolutely divine. I'm pinning and I will definitely make this!

  4. oh my goodness! This is a wonderful recipe. I have never eaten at Cafe Rio ( I can't have anything with dairy,onions or citrus). We grow tomatillos and I'll keep this recipe ready for harvest day. xo

  7. Would substituting the mayo for Greek yogurt alter the taste too much. I'm really craving this dressing just trying to think of a way to make it a little healthier :)

    1. It may due to the fact that there is already tangy buttermilk in it. You could try a lighter mayo or a veganaise if you are looking to cut calories. :)
