Baked Chicken Italiano


Tomorrow is the first day of Spring! I can not believe it is finally here! Although it will be bringing 4 inches of snow here in NY. Let's hope it warms up quickly and melts. Along with little flowers and buds popping up everywhere, Spring comes another school break, Easter, dance recitals and family birthdays. I love waking up to hear the birds chirping again, the warmer sun  and the smell of fresh Spring air. 




As I have mentioned before we eat a lot of chicken in our house. This is my favorite go to quick and easy weeknight dish. It's done in under 30 minutes and has a ton of flavor. It is so super easy to make. If you wanted you can grill this to after simply marinating the chicken in the sauce for a few hours. Either way is super delish!

Ingredients
4 boneless skinless chicken breasts, slightly pounded

juice of one lemon

2 cloves garlic

1/4 cup extra virgin olive oil

1/4 cup vinegar

1/2 teaspoon dijon mustard

1 teaspoon honey

1 teaspoon seasoned salt

1 teaspoon onion powder

1 teaspoon Italian seasonings

Instructions
Preheat oven to 450 degrees

Place the chicken breasts in glass baking dish.

In a blender cup or food processor blend all ingredients except chicken.

Pour the sauce over the chicken.

Baked for 20-25 minutes

Check center to ensure thoroughly cooked.
