Raspberry Almond Sandwich Cookies


Do I have a treat for you all today. Valentine’s day is one of my favorite times of year to bake cookies other than Christmas of course.  The design is pretty simple to, a heart and here xo. These were a mommy and daughter project during our last blast of snow. That snow storm left us over two feet of snow which is still here. Grrr....




My all time favorite flavor dessert combo is raspberry and almond.  Well really anything almond. What is it about these two flavors that is so delicious? They really do make the perfect marriage. These are perfect for your sweetie or even the kiddos. 


Soft stable raspberry filled almond sugar cookies dusted with powdered sugar is my new favorite cookie. I will be making these for years to come.

Ingredients
1 cup butter, softened

1 cup granulated white sugar

1 teaspoon vanilla extract

1 teaspoon almond extract

1 egg

2 teaspoons baking powder

3 cups all purpose flour

1/2 cup powdered sugar

1 12 ounce jar seedless raspberry jam

Directions
Preheat oven to 350° F.

In the bowl of your mixer cream butter and sugar until smooth.

Beat in extracts and egg.

In a separate bowl combine baking powder with flour and add a little at a time to the wet ingredients. The dough will be very stiff. 

Divide the dough batches, roll out onto a floured surface to 1/4 inches thick and cut using desired cookie cutter shapes.

Bake at 350 for 6-8 minutes. Let cool on the cookie sheet until firm enough to transfer to a cooling rack.

Sprinkle the confectioners’sugar on half of the sandwich cookie. Spread enough  jam on the remaining cookies and top with the sugared cookies. Store the cookies in an airtight container at room temperature for up to 5 days.
