Creamy Dreamy Tomato Bisque


Sometimes you just need a good bowl of soup. With the weather being so cold and us still having feet of snow soup it was for lunch the other day. Not just any soup creamy dreamy tomato bisque soup. I have never been a huge fan of tomato soup. Mainly because when I was a kid my grandmother improvised while making bucatini. And by that I mean she used the good old red and white can of condensed tomato soup instead of marinara sauce. She was old school you ate what was made and didn't complain. I'm pretty sure I cried.  It scared me for life until now. Seriously!




J loves tomato soup. But since my experience I can't even look at that can. How ever everything tastes better homemade right? It was a soup kind of day, so I took to the kitchen and got to creating. Here you have the end result.


I especially love the fact that are hidden veggies in it and my son devoured his bowl along with J. Anything to get them to try and eat their veggies! I served it along side some grilled cheese sandwiches and dill pickles.

Ingredients
2 tablespoons extra virgin olive oil

1 medium onion, finely chopped

1 medium carrot, finely chopped

1 stalk celery, finely chopped

2 garlic cloves, finely chopped

4 cups chicken stock or canned low-sodium broth

2- 28 ounce cans crushed tomatoes

3 tablespoons tomato paste

2 teaspoons sugar

1/2 cup heavy cream

Salt and freshly ground white pepper

parmesan cheese for garnish, optional

Ingredients
Heat the extra virgin olive oil in a medium saucepan over medium high heat.  Add the chopped onion, carrot, celery and garlic, cover and cook over moderately high heat, stirring occasionally, until the vegetables are just beginning to brown, about 5 minutes. Add the chicken stock, tomatoes, tomato paste and sugar and bring to a boil. Cover partially and cook the soup over moderate heat, stirring occasionally, until the vegetables are tender, 15 minutes. 

Transfer half of the soup to a blender and puree until smooth. Return the puree to the saucepan, add the heavy cream and cook until the soup is just heated through. Season the soup with salt and white pepper. Ladle the soup in bowls and garnish with parmesan cheese if desired.

  4. I admit, my love of tomato soup actually stems from the condensed canned. As a child I probably wouldn't have tried it homemade. My tastebuds have been enhanced though, lol. This looks divine. Thanks for sharing on Weekend bites
