Super Crispy Baked Chicken Bites


Kid tested and mother approved these little bad boys will also win over a crowd. Not fried no oil involved what so ever, they pack a serious crunch from a not so secret ingredient. With only 3 main ingredients and a 20 minute bake time dinner or your kids or even a football Sunday crown is done in a cinch! This is truly dinner made easy!




If it were up to my daughter she would eat chicken fingers and french fries with honey mustard at every meal 7 days a week 365 days a year. Every time we go out to eat not matter what kind of restaurant it may be she orders the same thing. Yet when we are home she eats whatever I put in front of her.


When I said there was 3 ingredients I meant it! Chicken, eggs and cornflakes. I always add a few extra seasonings though. The other secret is baking them on a cooling rack. This insures a perfect even crunch all around. The hot air from the oven gets underneath and forms a perfect crust. No greasy soggy chicken here!

Ingredients
4 boneless, skinless chicken breast halves

2 large eggs 

3 cups cornflakes

1/2 teaspoon salt

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

1/2 teaspoon seasoning salt

1 teaspoon paprika

Freshly ground black pepper

Directions
Preheat your oven to 400 Degrees F. In a food processor add the cornflakes, salt, onion powder, garlic powder, seasoning salt, paprika and pepper. Pulse the cornflakes until crushed into small pieces. Add to a shallow dish and set aside.

Slice each chicken breast lengthwise in half and cut into 2 inch pieces.

Beat the eggs. Taking one piece of chicken at a time and dip in egg mixture and coat with seasoned cornflakes, pressing flakes with your hands to help them stick better. Transfer each piece into the prepared baking sheet set with a baking rack that had been sprayed with cooking spray. This will help them cook evenly and quickly getting the hot oven temp all around them. Discard remaining flour, egg and cornflakes.

Bake for 15-20 minutes and serve hot with your favorite dipping sauces.

  1. It's so rare these days to find crispy chicken made with cornflakes! (Everyone seems to be using panko or breadcrumbs now) I love that these are baked, I think it makes a much better flavor than frying.
