Baked Sun Dried Tomato and Spinach Chicken Parmesan Meatballs


TGIF! What a week. I have just finished my 10 day cleanse. It was not as hard as I thought it would be. The best thing about it was because I was eating better so was everyone in my house. Even my picky 15 year old! Who knew that was possible.


I just love chicken parmesan. It is pretty time consuming to make. Especially if I am making it for a crowd. It also is usually fried which as we all know isn't oh so healthy. For this dish I have transformed it into little popable flavor packed meatballs. If you are a regular follower you may remember this amazing burger which these meatballs are a spin off of. I was never a fan of ground chicken until I made that burger. Which by the way you should also make.


Honestly these are delicious all on their own but when you smother anything with tomato sauce and top with cheese it instantly becomes that much better. These are perfect for a crowd or game day eats. Simply pop a tooth pick or appetizer fork in each one and serve. They will be gobbled up in seconds!

Ingredients

1/4 cup fresh baby spinach, chopped

1/4 cup sun dried tomatoes, chopped


1/4 cup grated onion

1 clove garlic, grated or pressed through a garlic press


1 teaspoon dried basil

1 teaspoon dried parsley

2 tablespoons parmesan cheese 


1/2 teaspoon salt

1/2 teaspoon pepper


1 pound ground chicken

1 cup marinara sauce

1 cup shredded Italian blend cheese

Directions
To make the meatballs, combine the spinach, tomatoes, garlic, grated onion, basil, parsley, Parmesan, salt, pepper, Stir together with a fork just until blended. Mix in the ground chicken and knead together gently until evenly combined. Form the mixture into meatballs about 1½-inch in diameter.

Preheat oven to 350°F. Prepare a baking sheet by lining with parchment paper.

Bake for 16-18 minutes until lightly browned.

Turn oven to broil.

Drizzle a spoonful of marinara over each meatball. Sprinkle with shredded cheese.

Broil for 2-3 minutes until cheese is golden brown and bubbly.

Eat!!!

  1. I wasn't a fan of ground poultry until I made my Florentine meatballs 2 + years ago. It's perfect for meatballs and burgers. Love these. Pinning.
