With all the running around I do as a mom, dance, sports, after school activities etc, dinner sometimes is on the fly. I dislike dinner on the fly. Happy October!!! 
I am hoping not to get hit with Hurricane Joaquin! It does look like NY will be getting some nasty weather over the weekend though. Honestly I will take it though. We have not had rain in what seems like forever. My poor lawn is officially  half dead along with all my neighbors. Rainy days like today call for comfort food. This sandwich is the epitome of a total comfort dish. All the deliciousness of a sloppy Joe turned Italian. Oh and it's smothered in 2 different cheeses from top to bottom.

Short and sweet...My favorite thing this week is that I'm finally not sick anymore! After a week in bed I have finally kicked it! Chicken soup works wonders!

My favorite thing this week is the changing weather here in NY. Living on an island you never know what your going to get weather wise. It's has been so crisp and cool in the mornings and just slightly warmer in the afternoon then back to crisp and cool at night. This truly is my favorite time of year! All the festivals, apple and pumpkin picking, and of course Halloween for the kiddos!

Remember this dressing from the other day? Well this is what I used it for! Normally you see Cafe Rio's Chicken shredded. Which by the way is amazing! But I wasn't into the shredded chicken kind of mood so I marinated the chicken breasts in the sauce for hours and then grilled them. Well the came out as expected delicious!

We all have crazy busy lives right? We plan our shopping trips and plan and prep our meals right? I don't know about you but sometimes I don't even have the time to do that. I am a huge fan of time saving meals especially one-pot wonders. We eat pasta at our house at least once a week. Some of you may be asking what the heck is a Plout? The Pluot, a cross between a plum and an apricot, looks like a plum. But tends to be a bit more meaty and tastes more like sweet honey. Not to mention it’s gorgeous red color, hence the name. I had bought a bunch from the farmers market and was trying to come up with a way to incorporate them into a salad. Here you have it!

Cranberry Chicken Salad

Sometimes life just throws us major curve balls. I have seen it more often than I would like to ever see again  admit. I never really dish my private business on here, it is a food blog. But sometimes you just need to take a break sit back and reflect on how lucky you really are. Life as we know it can always change in an instant. We had a pretty serious family emergency the last week. My precious nephew needed emergency brain surgery. If you follow me on Instagram you have seen his precious little face. Needless to say it's been an insane week of no sleep trips back and forth to the hospital and straight up worrying.  He is improving every day and hopefully will not have any further complications. He came into this world fighting 11 months ago and he sure is fighting now to heal quickly.
