Bacon Wrapped Jalapeno Popper Stuffed Pork Chops



What are everyone's plans for this upcoming weekend? My little girl turns 9 Friday! It really makes me wan't to cry. We will be celebrating all weekend. She will have a taco bar and zebra themed party. Hey what does one have to do with the other? Nothing! But this makes her happy. Now onto the recipe...I have been dying to make this dish. I have always seen it with chicken but never pork. Sooooo me being me and always daring to be different, here you have it. Stuffed pork chops, I just love them. But these right here well definitely are not your average stuffed pork chop. Inside is the ooey gooey goodness of a jalapeno popper and the outside is crispy smokey bacon brushed with yummy bbq sauce.

Rainer Cherry Summer Punch



We have been very luck so far t his summer that it has not been to hot. 85 being the hottest day so far. I'm sure as soon as August hits it the temperature will skyrocket. To beat the heat I love to make a great cocktail in the summer. Instead of a vodka or rum cocktail I opted for a much different version. I realized that I have not posted a cocktail recipe in forever. So here is a pretty serious one at that. If you have never tried moonshine you are missing out. While I can't drink it straight or even the white lightening version, this is a nice cocktail version to have. Don't get me wrong it still packs punch hence the name.

Grilled Shrimp Cocktail Kabobs


Shrimp on the "barbie"! We love shrimp cocktail in our house. I make it more than the normal person. In the summer months we grill so much that I am always looking to change things up in anyway I can. I also love grilled shrimp and grilled shrimp cocktail. They are done in 8 minutes! How can you beat that? When they are grilled the shrimp get a nice smoky flavor from the grill and then are brushed with sweet and tangy and slightly spicy cocktail sauce. Serve with lemon wedges and more sauce.

Black Bean Guacamole


My daughter is going to be 9 OMG 9 next week. She is my baby. Where have the years gone. I asked her what she wanted on the menu for her family party. We decided on a taco bar instead of a bbq. Taco's are one of her favorite foods. So I have been testing and planning the recipes. This is one of my favorites. I love avocados in every way. I think I love guacamole more. I prefer chunky guacamole to the smooth creamy kind. Like this one. Chopped avocado, tomato, onion black beans, lime and cilantro. Yum! Serve it with your favorite tortilla chips. Aren't these curled ones cool? So what's your favorite kind of guacamole?

Super Easy Garlic Dill Pickles


Monday again.....where does the weekend go? I hope everyone had a great one. These pickles just scream summer to me. I have been making these for a few years now. Is there anyone that can resist a pickle? They go perfect with grilled cheese. You will not believe how easy it really is to pickle just about any vegetable. I have done cauliflower, carrots, peppers and of course cukes. There are many different versions out there. I happen to like garlic dill the best. Don't get me wrong bread and butter is fabulous as well.  I'm a dill garlic girl.

Ingredients
3 pint jars (mason is works great or any jar with a lid)
2 Large English cucumbers
1 small onion
1 1/2 cups apple cider vinegar
1 1/2 cups water
1/4 cup sugar
2 tablespoons kosher salt
6 garlic cloves, peeled (2 per jar)
1/2 teaspoon whole mustard seed (per jar)
1/4 teaspoon crushed red pepper (per jar)
1/2 teaspoon black peppercorns (per jar) 
6 fresh dill sprigs flowers attatched (2 per jar)

Directions
Wash and slice the cucumbers into spears. Slice the onion into rings. 

In a large sauce pot, combine vinegar, water sugar and salt. Bring to a simmer.

Evenly distribute the onion rings to the bottom of jars. Add the spices and dill to each jar. Pack the cucumber spears firmly into the jars. You don't want to damage the cukes, but you do want make sure they are tightly stuffed.

Pour the brine into the jar, covering the cukes completely.

Tap jars gently on counter top to dislodge any trapped air bubbles.

Apply lids and let jars cool. When they've returned to room temperature, place jars in refrigerator. Let them sit for at least 48 hours before eating.

County Fair Funnel Cake



This right here makes me feel like a kid again. The fact that I can share it with my kids is even better. I have the fondest memories as a child of going to the county fair every year with my family. We looked forward to it ever summer. Besides all the entertainment (pig races were my favorite back then), rides (definitely the scrambler), and other great fair food I could not wait to get one or even two of these. Light, fluffy and just a little bit crunchy this gets dusted with powdered sugar and served hot for a fun and tasty treat. The toppings are endless. Ice cream, hot fudge, or even fresh jam. For this version I opted for the traditional powdered sugar and added some fresh summer strawberries and whipped cream. My kids were in heaven. Funnel cake doesn't have to be a once a year treat...make it a County Fair night by serving all the fair favorites for dinner. You never to old for fair food!

Summer Veggie Taquitos




What a week! I was a bit M.I.A. sorry for that. I took my little one camping for a night. We stayed with friends that were camping at the beach near our house. It was so relaxing even with seven kids running around. The coolest thing is the campgrounds are set right between the ocean and the bay. It is just absolutely gorgeous! Such a great way to enjoy the summer. Now onto these little bad boys. This is a perfect meatless Monday dish if that's your thing. Tons of yummy veggies and cheese all wrapped up in a crunchy tortilla. You won't even notice the meat is missing. Basically you can include any vegetable you like. I happen to love this mixture it has that southwest flair that just goes oh so well together. These are a great main dish or even as a appetizer. Serve them alongside your favorite guacamole and some sour cream.

Classic Pressed Cuban Sandwich


I hope everyone had a fantastic weekend. Our turned out well despite the crappy weather on the 4th. Is everyone bbq'd out? Is that even possible? If you made pork over the weekend and have some leftover this is the easiest way other than empanadas to use it up. You can go ahead and start the pork from scratch to make these also. Either way they are absolutely delicious. You have sweet ham, delicious roasted pork, swiss cheese, mustard and oh dill pickles all pressed and grilled together. I think I have found my new favorite sandwich like forever and ever. It's a total manwich to. He will love it. Mine did.

10 Awesome Grilled Main Dishes





 I hope everyone ready for the 4th and has fun plans. This year it it suppose to pour all day 
long. It has not rained in years on the 4th for July. I guess we are do. Our plans to spend the 
day at the beach have will literally be a wash out and I actually haven't a clue as to what we will do. Any ideas? I think it will most likely be spent inside watching the rain along with funny movies and one of these dishes cooked inside. These are ten of my favorite grilled main dishes that I actually make all year round. Each one can all be modified to be cooked in the oven. I have to say my favorite is the Surf and Turf Grilled Burrito. I have this thing with stuffing all sorts of yummy things into a tortilla and grilling it. My daughter would rather have a cheese quesadilla any day over a grilled cheese sandwich.
