15 Sensational Summer Salads




To me there is nothing better than having family and friends all gathered around great food. Especially in beautiful summer weather. I always end up being the house that entertains everyone every summer. Ask me how? We don't even have a pool! I don't mind it one bit though. The only thing I mind is the dishes! I'm still waiting on that dish fairy to appear along with the laundry fairy. Wishful thinking. Those are the two things I loath. OK enough about non existent fairies. These are just a few of my favorite summer salad recipes. Everything from bean to pasta to potato to slaw. They can all be paired with any meal or grilled bbq dish. Honestly I can eat most of them just for a meal.

Chorizo Stuffed Baked Quahog Clams


So I have been dying to share this recipe with you.
Living on Long Island we have an abundance of fresh seafood during the summer season. 
In our house we can't wait to get our hands on it. We fish, we crab, and sometimes we even clam. The kids favorite is crabbing. There is nothing better than ocean to table food.
For fathers day my dad wanted baked clams. I said OK we will have baked clams!
Man food? Maybe?But I love baked clams so I guess I let them think that for the day.
We did have to buy them from our local seafood market but they were fresh right out of our bay. Now you can just make baked clams or you can make these baked clams. I would vote for these. Not to spicy chorizo is the star of this dish along with the fresh chopped clams, 
red pepper, celery, onion, and garlic all blended with panko bread crumbs. There is a few other key ingredients as well. I steam them with all this stuff...because it adds a ton of extra flavor. You could even steam muscles with the same process.

Stuffed Caprese Chicken Burgers with Balsamic Roasted Red Pepper Aioli


I am in love with this burger.
It may be the best burger I have ever made.
Healthy ground chicken sun dried tomatoes, garlic, spinach 
and parmesan cheese all combined together.
Grilled to perfection we are now going to
 turn things up a notch or two by adding the aioli,
tomato and basil and you have one delicious dinner treat!

Perfect Herbed Fingerling Potatoes


We are a total meat and potatoes kind of family in our house.
Maybe it's because J and I just happen to be the exact same nationalities.
Irish and German (the meat and potatoes),
Italian (carb addiction).
I am a total potato lover. I will eat them in every way.
Baked, fried, boiled, roasted, doused with cheese, and loaded with whatever!
But these potatoes right here are my all time favorite kind of potato.
Tri colored fingerlings.
They have this amazing nutty, buttery and earthy taste.
This assortment includes the yellow-skinned Russian Banana, 
the orange-skinned French, and the Purple Peruvian.
The possibilities are endless with these adorable little spuds.
They are great sliced and roasted along side an array of dipping sauces.
In this recipe they are pretty much cooked 
in the simplest from yet pack a ton of flavor!

Sweet and Spicy BBQ Pulled Pork Sliders

A few weeks ago we had a family party at our home.
I always seem to have a ton of parties during the summer.
Rather than the usual hamburger and hot dogs, 
which we had anyway...
I decided to switch thing up a bit and make a slider bar.
A pulled pork slider bar.
Remember that Killer Coleslaw from the other day?
I made it just for these sliders.

Killer Coleslaw (Copy Cat Recipe)


There is this famous chicken joint that has the best coleslaw.
They also have a colonel and really good biscuits.
I have never liked coleslaw until I had to make it.
Now I always taste what I make, what cook doesn't?
This stuff is killer!
Highly addictive.
It tastes even better on top of this.

Super Easy Carmelized Onion and Bourbon Baked Beans



Let me just tell ya...
There is no need to make these from scratch.
Why fuss with dried beans when you can have these ready in under an hour.
If you wanted to it could be 20 minutes. 
You an simply caramelize the onions the day before.
Try not to eat them all.
I am all about prepping ahead.
Baked beans are a staple in our house every summer.
They are served at every one of our cookouts.
My step son put them on his hamburgers and hot dogs.
Weird to me, he loves it.
Whatever way you decide to serve these they will be a sure fire hit!

Fajita Lime Grilled Chicken




So I took a break from blogging last week.
I took a break for a very good reason.
I had a newborn in my house!
My sister had some complications from her c-section
so her and my nephew came to stay with us for a week.
I forgot how much work little babies are.
Before you know it hours have passed.
Its been 9 years for me!
Totally worth it though.
Needless to say mommy and baby are 
both doing well and back home.

It's almost officially Summer!
