Open Faced Meatball Parmesan Sammies




This is a fork and knife kinda sandwich.
Tender soft flavorful meatballs with your favorite tomato sauce all on top of garlic bread covered with melted cheese.
Yes please!
The kiddo's and the other half are sure to approve.
I know mine did.
Perfect for a week night dinner.
This would be an awesome make ahead meal.
 These babies can be made ahead of time and assembled whenever you are ready.
You can't beat that.

Magic Dust



All I can say is this stuff truly is magic.
This is a recipe used in many barbecue joints.
It really is a great all purpose seasoning for just about 
anything and I mean anything.
I have used it on french fries, which is my favorite, roasted potatoes, 
veggies, pork, burgers, and chicken.
The possibilities are endless.

Chermoula Spiced Roasted Chicken



I just love roasted chicken. 
I was looking for a new different recipe.
This is surely different and totally delicious!
If you are looking for a new chicken dish this is it.
I love tumeric.
I use it in an array of dishes.
This Chermoula marinade tenderizes and 
gives the meat with a yummy hint of lemon, 
the flavors of turmeric and fresh green herb, and 
all the rest of the amazing spices.
Traditionally this is a Moroccan marinade for fish.
I don't do fish eww.
So it went on chicken. 
It was delicious and I will make this again and again.

Sea Salted Rosemary Focaccia


Is everyone ready for Easter? 
I think I finally am.
We are hosting this year and we have a big crowd this time.
We will have ham, pasta and all the sides.
There always has to be pasta incorporated some how in my family.
So I made this bread, this amazing focaccia bread.
I call it pizza without the sauce and cheese.
Well that's what it is really anyway.

Parmesan Ranch Roasted Cauliflower

This is my new favorite side dish.
I am always looking for new sides.
If you are looking for a new healthy twist on a plain dish here it is.
There is something about ranch and parmesan that go so well together.
When you pair them with sweet roasted cauliflower.....wow!
I served it along some marinated grilled chicken breasts and garlic mashed potatoes.
This would be a perfect addition to your holiday table this season.

Strawberry Feta Salad


Baby lettuces, feta and fresh strawberries.
Normally you wouldn't think these ingredients would go together.
They do go really well together.
It is so easy to make and looks so purdy.
This is such a great take along dish to any cook out or party.
As far as dressings, 
I would pair this with either a balsamic or a poppy seed dressing.
I have tried it with both and they are both delicious.

Super Garlic Bread


I am Italian, I love Italian food.
We all know I am also a carb lover.
I love garlic. 
I put it in just about everything I make besides sweets of course.
This bread though...is something amazing only for the serious die hard garlic lovers.
You can adjust the garlic if need be by decreasing the amount of garlic cloves.
You could also sprinkle some parmesan cheese on it. 
Did I mention it has no butter!
That's right nada not a drop.
That should make you fell a little better about eating the bread of course!

Grilled Corn and Black Bean Salsa with Homemade Chips


I love homemade salsa. Especially when it has this list of ingredients.
I prefer a good chunky salsa like a pico de gallo to a pureed version.
Grilled corn in itself is one of the most delicious things ever.
When you add the rest of these ingredients it is even better.
Oh and some homemade tortilla chips! 
Can you tell I am still craving warm weather.

Thai Shrimp and Pineapple Fried Rice



It's Wednesday...
We are half way there!
After the snow on Monday it finally hit 60 here.
Woo Hoo!
Ok so onto this recipe...
I am not usually a fan of curry.
How ever the way it was used in this recipe is amazing!
I had tried this at one of our local food places and fell in love.
Me being me had to recreate it.
Not exactly the same but pretty close.
There is a lot of flavors going on here and they all go really well together.
