Korean BBQ Beef Lettuce Wraps


Wow-zas we got 5" of snow this morning.
What the heck?
Where did Spring go?
I know I said a billion times I am so over winter.
I'M SO OVER WINTER!!!
My poor flowers are all covered in snow.
I saw this recipe on another blog and fell in love.
It was so dang good.
I have been on an Asian food kick lately.
I love creating new recipes at home.

Panko Crusted Baked Mac and Cheese





We have been having frigid temperatures here again.
Nothing keeps you warm like comfort food.
Especially mac and cheese.
Along with my carb obsession is cheese.
This is a perfect marrige!
We dodged the snow here in NY.
Thank goodness!
We are all so over it.
The flowers a up and blooming.
Mother Nature needs to let them be.

Cajun Chicken Cordon Bleu Wraps


I love chicken cordon bleu. 
I did not have the time or frankly the energy to make it, 
yet I always have some shredded chicken frozen in the freezer.
I have been so pressed for time lately, hence the lacking of posts.
SORRY!!!!
Kid stuff....they have to come first.
So a new recipe was born!
What's wrong with spicing things up a bit?
These came out delicious.
Everyone gobbled them up and I had not one complaint.
Shocker...no kids complaining = one happy mom!

Spring Pea Pesto Ravioli



Happy Spring!
Even though I am a day late.
I am so happy that it has officially begun.
I am so over winter, like seriously over winter!!!
Have you ever made homemade ravioli?
It is super easy.
The possibilities are endless and I mean endless.
I kept these pretty simple with just ricotta and mozzarella.
The flavors all in the pesto here.

Ultimate Italian Chopped Salad



I am in love with this salad. 
I mean really in love.
Salads do not usually fill me, 
I am usually starving very soon after eating one.
This salad is a filler for sure!
Normally I would make this with pasta or tortellini
but I just wanted healthier version.
I am praying it does not snow again here! It went from the high 50's back to blah! Let's hope it's just rain!

Berry Blood Orange Sangria


                                        Let's start Monday off right, with a cocktail! 
I love Sangria.
I love every kind and flavor of Sangria.
I do have to say white peach is my favorite.
I will make it another time.
This one was so yummy to.
I loved the citrus berry mix.
We hit 50 degrees over the weekend 
and my snow drops are open in the front yard.
This means it's finally happening SPRING!!!
I was able to take my baby girl to the beach, 
even if it was just to skip some rocks.
I swear I will not complain when it's hot.
Especially after this winter.

Smothered Three Cheese Chicken Parmesan


I think everyone has a chicken parm recipe. 
It really is one of the easiest Italian dishes to make. 
I mean really anything smothered in cheese is delicious in my book.
How ever the only way I will eat my chicken parm is this way.
Super smothered with extra sauce and extra cheese. 
Three cheeses to be exact. 
Now you won't have crunchy chicken breasts that's a whole other version, 
but they will be super tender and gooey delicious!

White Bean and Tuna Salad


I've been on such and Italian food kick lately. 
Not just the pasta kind. 
I've been researching and trying all new recipes that 
I would normally never make or eat for that matter.
I guess you can say I've been trying to broaden mine and my families horizons.
Especially in a healthy way.
Now don't get me wrong we still eat the pasta, sauce 
and cheese with a side of bread.
I just could never give that up.
But once in a while I just need a change. 
This dish can be eaten as a meal which we did for lunch or dinner.
If you really wanted to get crazy you could even grill the radicchio.
Hey I may try that next time.
