Even my daughter gobbled them up.

Bang Bang Shrimp Lettuce Wraps (Healthy Version)


Super Bowl is on its way and some of us are trying to do 
the healthy new year.
I know I am.
I've seen this recipe time and time again on 
the internet and I have eaten it at 
Bone Fish Grill.
It's fried and it is O so delicious, 
how ever it is way loaded with calories.
Let me just say this version I came up 
with will make you forget all about the frying.
I promise.
This was the first time I have ever made lettuce wraps.
We now have a new easy go to dish in our house.
It is the simplest quickest dinner to make.
I think it took less that 20 minutes.
How can you beat that?

Zesty Cocktail Meatballs



Oh these little guys. 
Who in the world would ever thing grape jelly 
and chili sauce would taste so good together?
Certainly not me. 
A friend brought these over for new years they were pretty darn good.
She made hers with frozen meatballs.
I tend not to be a fan of the mystery meat so I made my version from scratch.
I also added the taco seasoning just to bump up the flavor a little more. 
These are great for your Superbowl Sunday party!

Pineapple Chicken Teriyaki


I am snowed in once again. 
It's 9 degrees here right now.
I hate the cold.
I think I may bake today.
It is a good kids in the kitchen day.
I do not like to play in the snow at all. 
Sorry kids you are on your own.
Any who...onto this yummy dish.
Chicken, peppers, onions, broccoli, 
and fresh pineapple over rice topped off with yummy sauce!
I have made it with both chicken thighs and breasts.
It was so much tastier with the chicken thighs.
Trust me.

Pineapple Teriyaki Sauce

What an insane week I had last week. 
Not only did I have the flu, 
but just as I was feeling better 
I broke out in an allergic reaction which sent me to the ER. 
Let me just tell you...my lips looked like lip injections gone bad! 
I even got laughed at. 
It was kind of funny looking I have to admit.
I may have also laughed at the sight of myself once I got passed the itching.
So after a ton of steroids through an IV today I am finally better.
What a debacle. She-sh!
Now onto this amazing sauce. 
This is my go to Asian sauce for all my chicken and beef dishes I make.
Pineapple just totally goes with teriyaki sauce.
It must be the sweet and salty thing.
I will be posting my chicken dish this week to match them up.

It is a new staple in our house.
Everyone loved it.
Even my non mushroom eating son.
Everything is better with bacon and cheese right?

Lobster Alfredo

It is soooooo cold here. 
It has not been this cold in years.
Good thing spring is only 70 something days away!
Oh I'm counting down the days for sure.
I can't wait to be able to open my windows and let the fresh air in!
Now onto this amazing dish.
My oh my....that's all I can say about this dish.
If you love lobster and pasta this ones for you. 
I love fresh seafood. Well as long as it isn't fish.
This dish would be a perfect date night dinner.
You could even make it for your hunny on Valentines day.

Sausage Paella

How did all my north east coast friends brave the crazy snow? 
We got about a foot here. 
I feel like it only snows once a year here now.
It used to snow all the time.
Don't get me wrong I can totally deal with the once a year snow thing.
So now onto the recipe.....
One dish, simple and easy Sausage Paella.
I always felt like Paella?
 That has to be so hard to make.
It's not and I don't even own a Paella pan. 
Ha!

John Wayne Cheese Casserole

Happy New Year ladies and gent's! I'm back! 
I hope you all had a fabulous holiday season. 
I know I did. 
Have you ever had this casserole?
Let me just tell you....OMG!!!
It is by far the best anytime dish I have ever had.
My aunt makes it every year for our annual after Christmas brunch.
I finally decided to give it a try.
Not only was it the easiest thing to put together, one because there's hardly any ingredients and two you can basically put everything but the kitchen sink in it.
I have made this twice so far.
The first time I followed the recipe. 
The second time I made it with just ham and cheese.
Both were great! 
I hope you will give it a whirl.
