Chicken Parmesan Casserole




For years I can remember my grandmother always having a tub of I Cant Believe It's Not Butter in her fridge. She would always butter our bread for Sunday dinner with it. Sunday dinner usually consisted of homemade sauce, spaghetti, bread slathered with I Can't Believe It's Not Butter and a yummy salad.  As I got older and learned to cook on my own I always bought it. I Can't Believe It's Not Butter surely does taste like the real thing! Gotta follow in grandmas foot steps right? Until this day I always have a tub of it in my fridge. It makes the perfect spread for a grilled cheese sandwich or on your morning toast. 




For this dish I saute the chicken in I Can't Believe It's Not Butter because It is now made of real and simple ingredients!  The new I Can't Believe It's Not Butter is made from real, simple ingredients you can recognize like a delicious blend of plant-based oils, purified water and a pinch of salt.  No wonder it is so yummy!  There is also no artificial flavors and 0 grams trans fat per serving making it a healthy buttery spread. Did you know there are 3 varieties of I Can’t Believe It’s Not Butter?  They make Original, Light and Olive Oil.  Just one bite and you'll 'Believe'!

Ingredients
2 lbs raw boneless, skinless chicken breasts, cubed

1 teaspoon Italian seasoning

salt and pepper

2 tablespoons I Cant Believe It's Not Butter

1 24 oz jar marinara sauce (the good stuff)

2 cups shredded mozzarella cheese, divided

2 oz parmesan cheese, freshly grated, divided

8 oz ricotta cheese

1 box rotini pasta


Directions

Melt I Can't Believe It's Not Butter in a medium skillet over medium high heat. Sprinkle the cubed chicken with the Italian seasoning, salt, and pepper. Saute chicken until no longer pink.
Remove chicken and set aside.

Preheat the oven to 375ยบ F.

Meanwhile, cook the rotini according to package directions. Drain and mix with ricotta cheese.

Pour half of marinara sauce mix into a 13x9" baking pan, layer with rotini mixture, chicken and  half of the cheeses. Add the remaining marinara sauce. Sprinkle with remaining the cheeses.

Bake until hot and bubbling and cheese is melted, 15-20 minutes.
