Baked BBQ Sweet and Sour Chicken {Freezer Meal}



I am not ready for winter. Setting the clocks back and it now getting dark at 4:30 pm well just sucks. I am such a summer girl. I love how it gets dark at 8:30 pm and it's nice a warm not freezing at dark. If I wan't freezing and dark I will go in the house in the a/c and turn the dang lights off! The joys of living on the east coast. But there is a ton of great things to!
So this dish right here let me just tell ya it's so good! If both my kids ate it, it's good.



The simplicity of this dish is just perfect. I was never a big fan of freezer meals until I made this. I just don't have the time to cook every night anymore. So on busy nights freezer meals come in handy instead of take out. At least I know where the food came from and who prepped it me!


Chunks of white meat chicken cook to perfection alongside the veggies and pineapple as they come together to make the delicious sauce. Serve it over hot cooked rice and you have an instant meal that the whole family will enjoy!

Ingredients

3 boneless skinless chicken breasts

2 tablespoons magic dust 

2 medium bell peppers, seeded and chopped into 1 inch pieces

1 medium onion, chopped into 1 inch pieces

1 1/2 cups fresh pineapple cubes (fresh is best but I have used canned as well)

1/2 cup your favorite honey bbq sauce (I always use sweet baby rays)

Hot cooked rice for serving

Directions

If Freezing:
Place all of the ingredients except the rice in a freezer zip lock bag and shake to coat. Freeze until ready to use.

To bake frozen preheat your oven to 350 degrees F and bake for about 45-min to an hour.

If making fresh:
Preheat your oven to 350 degrees F. Spray a 13x9 inch baking dish with cooking spray. 

In a large bowl add the chicken and sprinkle with the magic dust. Toss to coat. 

Place all the ingredients including the chicken in a 13x9 inch baking dish. Drizzle with the bbq sauce and bake for 30 minutes stirring about half way through. 

Serve over hot cooked rice.
