Beef Pot Pie Hand Pies



Happy October! I can't believe it's finally feeling like fall around here. I think I can finally put the flip flops away. Every time I make beef stew I always have leftovers like this Cola Beef Stew. Which is my all time favorite by the way. I can't stand to see leftovers go to waste so seeing that my Chicken Pot Pie Turnovers were such a hit I couldn't resist making these. Handy dandy comfort food at its best. Whats not to love.



Buttery soft flaky pie crust filled with amazing beef stew and all the fixings inside. Yes please! These were just a test run but ended up perfect.


My meat and potatoes family fell in love instantly. The possibilities are endless when it comes to stuffed crusted foods. These are portable easy and ready in under 30 minutes!

Ingredients

1 pack of pre-made pie crusts (2 in a pack)

4 cups left over beef stew

4 tablespoons butter melted

Directions

Remove pie crust from package and let sit fifteen minutes to come to room temperature or easily handled without breaking. Lay it out on a floured surface, and cut 4- 4 inch circles in each crust.  Add the scraps together and make one more. You will have a total of 10 when using 2 pie crust package. 

Place each hand pie on a silpat or parchment lined baking sheet.

Spoon about 1 tablespoon of stew into each disc, fold over and crimp edges. Brush each one with melted butter.

Bake at 425 for 15-18 minutes until golden brown.
