Autumn Kale & Kiwi Berry Salad


Ok It's happened. I have finally succumbed to the kale bandwagon. Now I have had it here and there but not on a regular basis. I cannot believe what I was missing! My kids did not even notice the difference in the salad...hehehe. I love sneaking healthier things in their meals. How about this Autumn Kale and Kiwi Berry Salad! Isn't it pretty? Aren't they cute? You are probably saying why the heck is a Kiwi Berry right? I said the same thing when I say them in the store. All three kids love kiwis so I couldn't pass them up. The size of a grape and they taste like a kiwi/banana/grape sort of? They are delicious though. They also don't have that furry skin so the entire berry is edible.  I will continue to buy them as long as they are in season.


Combined with the baby kale, kiwi berries, cucumbers, pecans, carrots, dried cranberries and red onion all covered with a creamy dressing this salad is delicious. So if you are looking for a delicious healthy lunch, dinner or treat give this salad a try.

Ingredients


For the dressing:
1/2 cup plain greek yogurt 

2 tablespoons mayonnaise

1 tablespoon fresh dill

2 small cloves garlic, minced

1 tablespoon olive oil

3 tablespoons apple cider vinegar

1 teaspoon honey or agave nectar

1 teaspoon dijon mustard

1/2 teaspoon fresh lemon juice

salt and pepper to taste

For the salad:
4 cups baby kale

4 cups field greens

1 small red onion, thinly sliced

2 cups dried cranberries

1 cup chopped pecans

2 carrots grated (I leave the skin on)

2 cups kiwi berries

1 medium cucumber seeded and sliced


Directions:

In a medium bowl whisk all of the dressing ingredients well and set aside.

To assemble the salad add all the salad ingredients in a large salad bowl. Toss gently and drizzle with dressing. Toss gently again to coat and plate.

  7. I have been seeing more about the healthy reason to use kale and seeing more recipes, this salad looks great, and really the kids cant tell its not lettuce? I will have to watch for the kiwi berries, had never heard of them until now. Would love to have you stop by and share your recipe.
