Soft and Chewy Double Chocolate Chip Cookies



Treat yourself to a sweet treat with these perfect Soft and Chewy Double Chocolate Chip Cookies! The perfect combination of semi sweet chocolate and sweet white chocolate chips. What is it about cookie dough that is just happiness in a bowl? It's a sort of addiction to just want to eat it! 





I love a good chewy cookie. The key secret to making them stay that way is instant pudding mix. Yep I know right! Who knew! Now I ran out of vanilla extract and all I had was almond on hand so I said what the heck! I love almond flavor and it did not disappoint one bit.


They stayed perfect for days and days.

Ingredients
2 sticks unsalted butter, softened

1 cup granulated sugar

1/2 cup light brown sugar, packed

2 large eggs

1 teaspoon pure almond extract (I ran out of vanilla and the almond taste was amazing)

2 1/2 cups all-purpose flour

2 tablespoons vanilla jello instant pudding mix

1 teaspoon kosher salt

1 teaspoon baking soda

1 cup white chocolate chips

1 cup semi sweet chocolate chips

Directions
Preheat oven to 350 degrees F. and line a large baking sheet with a silpat liner or parchment paper.

Place butter and sugars into stand mixer and beat until combined. Add eggs and vanilla mixing to combine. 

Slowly add the flour, salt, baking soda and chips, beating until just combined. Using a medium cookie scoop, scoop dough onto silpat or parchment lined baking sheet about 1 inch apart. Bake for 11-15 minutes, until baked through. 

Remove from oven and let cool on baking sheet for 15 minutes before transferring. Store in an airtight container if you happen to have any left!

Makes 3 dozen cookies
