Perfect Tuna Mac Salad



And so it is the official end of summer. How ever being that we live just a few blocks from the ocean I will plant my butt in that sand until it gets to cold to do so! The kids start school tomorrow! Ahh oh so bittersweet it is for me. I will miss them but I will love the piece and quiet as well. I just love macaroni salad. This has all the traditional fixings, pasta, dressing, pepper, onion, carrot and tomato. 





 I was never a big fan of tuna as an adult. I think I probably ate to much of it as a kid. But adding it to this salad made a world of difference. It is delicious. I have made this so much for my other half by request of course, that he said at one point he had to go to TMA Tuna Mac Anonymous. He's a weird o I know.

Ingredients
1 package elbow macaroni or any other shot cut pasta, cooked according to package directions, rinsed, and drained


1/2 cup diced celery

1/4 cup minced red onion


1/4 cup chopped carrots


1/4 cup chopped green bell pepper


1/2 cup seeded diced roma tomato


1 cup prepared mayonnaise or veganaise 


1 teaspoon dry mustard


1/2 teaspoon prepared mustard


2 teaspoons sugar


2 tablespoons cider vinegar

2 cans (about 5 ounces each ) tuna in water, drained


1/2 teaspoon kosher salt, more to taste


Freshly ground black pepper


Directions
In a large bowl combine the macaroni, celery, onion, carrots bell pepper and tomato. In a small bowl, whisk together the mayonnaise, mustard's  sugar, vinegar, and salt. Pour the dressing over the salad and stir to combine. Add in the 2 cans of tuna and toss gently. Season with salt and pepper to taste. Refrigerate until ready to use.

Store covered in the refrigerator, for up to 3 days. 

*If making ahead you may need to add more mayo as the pasta tends to soak it up.
