Today is a special day in our family! My baby girl Miss Maddie Leigh turned 9.
Sigh.....and maybe a tear....or two....or three....no hysterics I promise! We will be celebrating the weekend away. Lot's and lot's to do! Ok onto this delectable dish. There is nothing better than fresh summer fruit. Have you ever had grilled fruit? If you have not you are totally missing out big time! When fruit is grilled it gets a little softer and the natural sugars caramelize leaving beautiful grill marks and an extra layer of flavor.
Have a fantastic weekend!
1 pint of strawberries, sliced
4 nectarines, sliced
1/2 pint blueberries
2 cups fresh leafy greens of your choice
3 mint sprigs, leaves separated and torn
1/2 cup feta cheese
Arrange the fruit except the blueberries in a single layer on the gill or in a grill basket. Make sure it is the hottest part of the grill directly over the heat elements. Grill, turning the fruit once or twice, until the surface of the fruit begins to caramelize, about 5 minutes total.
Arrange greens on a platter, place the fruit around them along with the berries. Sprinkle with feta and mint and serve.
