Stuffed Caprese Chicken Burgers with Balsamic Roasted Red Pepper Aioli


I am in love with this burger.
It may be the best burger I have ever made.
Healthy ground chicken sun dried tomatoes, garlic, spinach 
and parmesan cheese all combined together.
Grilled to perfection we are now going to
 turn things up a notch or two by adding the aioli,
tomato and basil and you have one delicious dinner treat!






Ingredients

For the aioli:

1/2 cup canola mayonnaise

2 tablespoons aged balsamic vinegar

1 large roasted red pepper, minced


For the burgers:

1 pound ground chicken

1/4 cup spinach, chopped

1/4 cup sun dried tomatoes, chopped

1 clove garlic, grated or pressed through a garlic press

1/2 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon onion powder

2 tablespoons parmesan cheese 

4 slices fresh mozzarella or baby bell cheese

4 large basil leaves

4 large beef steak tomato slices

4 hamburger buns

Directions

For the aioli:

In a food processor add all ingredients and process until well blended. Pour into a small bowl and refrigerate until needed.

For the burgers:

In a large mixing bowl mix all the ingredients except the mozzarella, basil, tomato slices, and buns. Mix together with your hands until well combined. Do not over mix.

With your hand score the mixture down the center then across the middle, making four parts. Separate each part and make into four patties.

Grill 4 minutes on each side or until cooked through.

Spread each bun with the aioli then add a tomato slice, basil leaf, burger patty, and top of bun.

Enjoy!
