Fajita Lime Grilled Chicken

So I took a break from blogging last week.
I took a break for a very good reason.
I had a newborn in my house!
My sister had some complications from her c-section
so her and my nephew came to stay with us for a week.
I forgot how much work little babies are.
Before you know it hours have passed.
Its been 9 years for me!
Totally worth it though.
Needless to say mommy and baby are 
both doing well and back home.

Onto the recipe.
It's almost officially Summer!
With that comes all the grilling you an possibly do.
Well here on the east coast anyway.
I love fajitas.
I'm all about making my own seasonings and along came this dish.

1-1/2 teaspoon chili powder
1-1/4 teaspoon ground cumin
1/4 teaspoon cayenne
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon adobo powder
Kosher salt and freshly ground black pepper
2 tablespoons olive oil, divided use
2 tablespoons fresh lime juice
6 to 8 boneless, skinless chicken breasts
1 large vidalia onions, quartered and thinly sliced crosswise
1 large red bell pepper, cored, seeded, and cut into strips
3 medium cloves garlic, smashed and minced

Heat you grill to 350 degrees F.

Mix the chili powder, cumin, onion powder, garlic powder, adobo powder, salt and pepper in a small mixing bowl. Add one tablespoon of olive oil and one tablespoon lime juice mix to make a paste. Rub the chicken on both sides with the spice rub. Grill the chicken until cook through flipping once about 4-5 minutes per side depending on the thickness of your chicken breast.

Meanwhile, heat the remaining one tablespoon of oil in the skillet over medium-high heat. Add the onion, bell pepper, and 1/2 tsp. each salt and pepper and cook, stirring occasionally, just until the vegetables begin to soften, 3 to 4 minutes. Stir in the garlic. Stir in the lime juice. Transfer to a bowl, cover loosely with foil, and keep warm.

Serve the chicken alongside the peppers and onions. You can serve them with your favorite Mexican rice dish or slice chicken and serve in warm tortillas.
