Super Food Slaw



Forget about plain boring lettuce.
I have a confession...
I never liked kale 
and
I hated brussel sprouts,
until I had this.
I can't believe what I was missing! 
Not to mention the health benefits of eating all this.

It's kind of a salad but more like a slaw.
7 super foods are included in this powerhouse salad.
Broccoli, Brussels Sprouts, Green Cabbage, Sweet Baby Kale, Chicory
Dried Cranberries, and Pumpkin Seeds all tossed with an amazing sweet poppy seed dressing.

Ingredients
FOR THE SALAD:
5 oz. mixed baby kale leaves, (I always use Earthbound Farm Baby Kale Mix)
5 oz. chicory, stems discarded and leaves torn into bite-size pieces 
5 oz. broccoli slaw (cabbage and broccoli)
5-brussels sprouts, sliced
1/4 cup roasted pumpkin seeds
1 cup dried cranberries

FOR THE DRESSING:
1/4 cup Greek yogurt
Zest and juice of one lemon
1 tablespoon granulated sugar
1 tablespoon poppy seeds
1/4 teaspoon salt
1 tablespoon olive oil

                         
The flavors in this slaw will be dancing all around in your mouth.
Along with a little crunch!


Directions
Place yogurt, zest, lemon, sugar, poppy seeds, and salt, in a mini food processor.

Blend until well combined.

Place all of the salad ingredients in a large bowl, toss to combine.

Drizzle with the poppy seed dressing. Toss to coat.

  2. Oh that sounds absolutely wonderful! I wish I had these ingredients on hand to make tonight. I've never tried kale outside of a smoothie, but I love Brussels Sprouts. Thanks for sharing on Foodie Friday
