What a crazy mid week and weekend did I have!
My sister went into labor a few weeks early and
the poor thing spent 40 hours trying to bring
my nephew Jake into this world.
After a c-section he is here and one of t
he cutest little baby boys I have ever seen!
Now onto this dish....
This is a great throw it together quick weeknight meal.
Seasoned ground beef , plenty of veggies and rice = yummy!
Oh and some cheese just for good measure!
For a healthier version you an substitute
the beef for turkey and the white rice for brown.
Instead of a casserole dish you an put them into
individual dishes like this one.
1 1/2 pounds lean ground beef or ground turkey
1 cup diced onion
1/2 cup diced bell pepper
2 jalapenos seeded and deveined, chopped
16 oz. tomato sauce
1- 10 oz can of Diced Tomatoes
1/4 teaspoon red pepper flakes
1 teaspoon Magic Dust seasoning
1 1/2 tsp dried oregano
1 teaspoon cumin
2 tsp chili powder
2 cups frozen corn
1-10 oz can black beans, drained and rinsed
1 cup cooked white or brown rice
1 cup shredded cheddar cheese
Preheat oven to 325 degrees. Spray a two-quart casserole dish with cooking spray.
In large skillet brown ground beef with onions, bell pepper, jalapeno,red pepper flakes, magic dust, oregano, cumin and chili powder. Add the tomato sauce, diced tomatoes, and simmer for 15-20 minutes.
Next add the frozen corn and simmer for a few more minutes. Remove from heat and stir in the 1/2 cup of cheese until melted. Gently stir in the cooked rice. Pour all into prepared casserole dish and top with remaining shredded cheese. Bake for 20-30 minutes, or until browned and bubbly. Garnish with green onions if desired.
