Baked Parmesan Eggplant Chips

Tis the season for all my favorite veggies!
I love eggplant.
Whether it Parmesan style, grilled, stuffed,
or even Capanota style (my fav).
I steered away from frying them.
I wanted a healthier snack.
These are a great anytime snack or appetizer.
Better yet perfect for a dinner party, a sure crowd pleaser.
In that case I would triple the recipe.
Heck I'd even eat just these for dinner.
You wont be able to stop at even two!

Slow Braised "No Peek" Beef Bits

I know it's almost summer 
sometimes I still wan't comfort food.
We had a few rainy days here.
Don't get me wrong we needed them.
I always want comfort food when it rains.
I also want my pj's....seriously.
I had just bought some stew meat cubes
and I have switched our meat selections, from the regular 
grocery store stock to all organic meats. 
The difference in the beef alone was like night and day.
The beef in this dish came out like butta! 
Cut it with a fork just like filet mignon except half the price.
Give it a try. 
You wont be dissapointed!

Forget about plain boring lettuce.
I have a confession...
I never liked kale 
I hated brussel sprouts,
until I had this.
I can't believe what I was missing! 
Not to mention the health benefits of eating all this.

Southwest Baked Beef Casserole

What a crazy mid week and weekend did I have!
My sister went into labor a few weeks early and 
the poor thing spent 40 hours trying to bring 
my nephew Jake into this world.
After a c-section he is here and one of t
he cutest little baby boys I have ever seen!
Now onto this dish....
This is a great throw it together quick weeknight meal. 
Seasoned ground beef , plenty of veggies and rice = yummy!
Oh and some cheese just for good measure!
For a healthier version you an substitute 
the beef for turkey and the white rice for brown.
Instead of a casserole dish you an put them into
 individual dishes like this one.

Honey Balsamic Glazed Green Beans

Crisp green beans covered in a honey balsamic glaze.
Ummmm...NoM nOm
We love green veggies in our house.
I like every color veggie.
My kids especially love green beans.
I can eat them in every way possible.
They are the only vegetable my daughter will eat cooked.
She only eats raw veggies, she is my little 
This makes me very happy.
I am a firm believer in that everything 
tastes better with something on it.
Call me a spooger, I always
need a sauce or seasoning or something to dip in.
So I give you these.

Grilled Korean Beef

How was everyone's weekend?
I hope all the moms had a fabulous Mother's Day!
 The weather is finally turned 
into somewhat of a spring season.
That makes me happy :)
I can use the grill and get back to all the 
great stuff that comes along with spring and summer. 
I want to try and broaden my horizons with the grill this year.

Fully Loaded Pizza Bagels

 I literally had nothing to cook for dinner this one night.
This is far from a gourmet meal.
The kiddies weren't suppose to be home and ended up staying in.
It was a clean out the fridge and pantry kind of meal.
We were also on a tight schedule so this was the quickest 
and easiest thing I could come up with.
I had some bagels that were getting stale so what do you do with stale bread?
Well you toast it of course!
My kids love bagel bites and when you quarter these you 
can totally tell the difference between those frozen ones 
because of the fact that they taste amazing!
It's all in the extra cheese and the bake time!
They tasted like a good Sicilian pizza.
Sometimes meals on the fly are just easier.

Greek Wedge Salad

This is the most delicious salad totally fresh and wonderful tasting. 
I love wedge salads. You can eat them for lunch all alone or as a side dish.
These are a great addition to any evening meal.
Even better for a dinner party.
You could even go a step further and make a wedge salad bar!
Everyone can add they're own toppings and style of salad.

Pernil Empanadas

Happy Cinco De Mayo!
I'm sure you may be asking what the heck is Pernil?
Well I didn't know either until last weekend.
Essentially it's roasted pork shoulder with cumin, and garlic.
It's roasted for hours and it's well worth it.
We had a baby shower for my sister and this was one of the dishes a family member brought.
Now I've had plenty of roasted and pulled pork recipes but this one knocks it out of the park!
We had so much left over and I had just bought some empanada dough discs. 
I cheat, I hate baking.

Cheesy Spinach Rice Pilaf

I just love side dishes.
This dish is a perfect compliment to any chicken,
I prefer it with grilled chicken.
It has a Mediterranean flair to it, which I <3.
You can also put it along side pork, beef or lamb.
Or just eat it alone like I have in she past...shhhh
I do that sometimes.
I guess there is really no rule for just 
eating a side dish for a meal right?
Ahhh who cares!
