I love chicken cordon bleu.
I did not have the time or frankly the energy to make it,
yet I always have some shredded chicken frozen in the freezer.
I have been so pressed for time lately, hence the lacking of posts.
Kid stuff....they have to come first.
So a new recipe was born!
What's wrong with spicing things up a bit?
These came out delicious.
Everyone gobbled them up and I had not one complaint.
Shocker...no kids complaining = one happy mom!
4 flour tortillas
4 slices deli muenster cheese
4 slices deli ham
Honey mustard, any kind will do
4 cups shredded cajun chicken, such as this
Preheat your oven to 350 degrees F.
Place the tortillas on a plate and microwave for 1 minute until soft.
Lay out the tortillas and top with cheese and ham.
Spread honey mustard down the center and top with the shredded chicken. Roll up, tucking the ends in as you go.
Place on a baking sheet seam side down and bake for 20 minutes until golden brown.
