Bacon and Egg Breakfast Panini


Sometimes you just need a simple back to basics recipe. 
Whats more simple than bacon and eggs?
But since it is so simple why not spruce it up a bit?
I had a loaf of crusty ciabatta bread that had to be used 
and I wanted BACON so I added some eggs.
Oh and some cheese.
The ciabatta made it that much better.

Ingredients
2 whole Large Eggs
Kosher Salt and Black Pepper
1/4 cup grated cheddar cheese
2 slices bacon
1-4 inch piece of ciabatta bread, sliced in half
olive oil

In a medium bowl, whisk together the eggs, milk, salt and pepper. Set aside.

Cook bacon in a skillet over medium heat until golden and crispy. Drain on paper towels and set aside.

Drain the bacon fat and wipe out with a paper towel. Turn the heat to low. Stir the eggs around until the are light and fluffy and cooked through. Remove the pan from the heat.

Preheat your panini press. Brush one side of each slice of bread with the olive oil 

Layer the cooked eggs on the bread, then the cheese and bacon. Close the press and cook.

Cook until nice and toasted. Cut and serve.

    1. You don't really even need one. You can use a grill pan or a skillet and a heavy pan on top.

  4. I just bought a grill/panini maker!! This will be perfect to send with my son on those mornings where he is eating breakfast as he is running out the door!!!

  5. Rina, you've inspired me to get out the panini pan for the boys (and myself) tomorrow morning. Yep, I'm one of those moms that make fresh breakfast in the morning... hehe

  6. Love this idea! Freshly scrambled eggs and melty cheese sandwiched between two grilled and toasty slices of bread! Making this tomorrow AM :)
