How did all my north east coast friends brave the crazy snow?
We got about a foot here.
I feel like it only snows once a year here now.
It used to snow all the time.
Don't get me wrong I can totally deal with the once a year snow thing.
So now onto the recipe.....
One dish, simple and easy Sausage Paella.
I always felt like Paella?
That has to be so hard to make.
It's not and I don't even own a Paella pan.
1 sausage pinwheel, casing removed (I had Italian on hand)
2 tablespoons olive oil
1 spanish onion, chopped
1 red bell pepper, coarsely chopped
3 cloves garlic, crushed
1 pinch saffron threads or a package of goya sazon
1 bay leaf
1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes
2 cups uncooked short-grain white rice
1 quart chicken stock
1 1/2 cups frozen baby peas
Break off pieces of sausage and brown in a large skillet over medium high heat. Remove with a slotted spoon and set aside.
Heat 2 tablespoons olive oil in a the same skillet or paella pan over medium heat. Saute bell pepper and onion. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, bay leaf, oregano, and chicken stock. Bring to a boil, cover, and reduce heat to medium low. Simmer 20 minutes. Add baby peas and sausage and stir. Serve warm.
