Where have these little darlings been all my life?
All I can say is forget the chips!
These will now be my go to snack forever.
Even my daughter gobbled them up.
Not to mention how healthy they are.
You can even serve them this weekend for the big game.
1 15 ounce can of chickpeas (garbanzo beans, I always use organic)
1 teaspoon olive oil
1-2 tablespoons cajun seasoning (depending how spicy you like it)
1/2 teaspoon salt
Preheat oven to 400 degrees.
Rinse and drain the chickpeas.
Pat them dry with paper towels and remove most of the skin from them.
Place the chickpeas on a sheet pan and drizzle with the olive oil.
Roast them for 40 minutes.
Put them in a serving bowl and sprinkle on seasoning and salt.
