Bang Bang Shrimp Lettuce Wraps (Healthy Version)


Super Bowl is on its way and some of us are trying to do 
the healthy new year.
I know I am.
I've seen this recipe time and time again on 
the internet and I have eaten it at 
Bone Fish Grill.
It's fried and it is O so delicious, 
how ever it is way loaded with calories.
Let me just say this version I came up 
with will make you forget all about the frying.
I promise.
This was the first time I have ever made lettuce wraps.
We now have a new easy go to dish in our house.
It is the simplest quickest dinner to make.
I think it took less that 20 minutes.
How can you beat that?

Ingredients

For the sauce:
½ cup mayonnaise
4-5 teaspoons chili garlic sauce, such as Sriracha sauce
1 teaspoon granulated sugar
1 teaspoon rice vinegar

1 lb. medium shrimp, peeled and deveined
1 teaspoon salt
½ teaspoon ground black pepper
¼ teaspoon onion powder
¼ teaspoon garlic powder
¼ teaspoon dried basil

For the relish:
1 cup chopped tomato
1 cup chopped avocado
juice of 1 lime
a good handful of cilantro, chopped

2 heads of Boston lettuce, washed, dried and leaves carefully separated
zest of 1 lime

Directions

To make the sauce:
Combine the mayonnaise, siracha sauce, sugar and vinegar in a small bowl and set aside.
 
To make the relish:
In a medium bowl combine all the ingredients, cover and set aside in refrigerator. 

For the shrimp:
Heat a non stick grill pan or skillet to medium-high heat.
Sprinkle shrimp with salt, pepper, onion powder, garlic powder and dried basil.
Grill shrimps until opaque about five minuted per side.

For the assembly:
Layer each piece of lettuce with a few shrimp, then the relish and drizzle with sauce. Sprinkle with the lime zest. Wrap and enjoy!
Serve warm or cold.
