You guys it's pouring here. Like raining cats and dogs nor'easter style pouring. I wish it was snow. Snow is so much prettier. A friend of mine had given me a bottle of apple pie vodka. Interesting right? It had me intrigued. Not something I would normally drink. So after giving it a taste test it became apparent that it needed to turn into sangria. It was the best sangria I have ever has ever! It was meant to be and there was none and I mean none left.

Wow December already! November flew by. Time to go into full swing Christmas mode. I hope you all had a wonderful holiday. If you follow me here you may have seen that right before Thanksgiving my lovely farmer friends gave us and abundance of fresh cut winter veggies. There was so many I had to give a ton away! Thankfully I had not gone shopping for Thanksgiving yet. So needless to say we had a smorgasbord of veggie sides for Turkey day. One dish included these. For years I can remember my grandmother always having a tub of I Cant Believe It's Not Butter in her fridge. She would always butter our bread for Sunday dinner with it. Sunday dinner usually consisted of homemade sauce, spaghetti, bread slathered with I Can't Believe It's Not Butter and a yummy salad. As I got older and learned to cook on my own I always bought it. I Can't Believe It's Not Butter surely does taste like the real thing! Gotta follow in grandmas foot steps right? Until this day I always have a tub of it in my fridge. It makes the perfect spread for a grilled cheese sandwich or on your morning toast.

Is everyone ready for Thanksgiving? Minus the whole shopping part my menu is planned and ready to be executed! I cook for a crowd every year. Thanksgiving is one of my favorite holidays. With the holiday season in full swing I realize I am seriously having a hard time letting go of summer. It just gets so cold here! I do love the fall but winter is my nemesis. Sometimes you just have to change up the good old american burger. I definitely accomplished that with this Patty Melt. It is the ultimate man sandwich to. I made it for the other half and well he was stuffed. Easy peasy and quick to! This is a perfect quick weeknight dinner. Serve it alongside some tator tots, fries or onion rings.

All I can say is TGIF. What a week! From sick kids to pouring rain I am so glad it's over. Remember these awesome Tator Tots? Well I have had several requests for the sauce on the side. Here yee have thee! This stuff needs to come with a warning label. It's highly highly addictive! We don't have a Red Robin in our parts. I am not ready for winter. Setting the clocks back and it now getting dark at 4:30 pm well just sucks. I am such a summer girl. I love how it gets dark at 8:30 pm and it's nice a warm not freezing at dark. If I wan't freezing and dark I will go in the house in the a/c and turn the dang lights off! The joys of living on the east coast. But there is a ton of great things to!
So this dish right here let me just tell ya it's so good! If both my kids ate it, it's good.

Ahhh comfort food! How I love thee so! Not to mention this version is hiding veggies and your kids will never know. Mine sure didn't. My son is the worst eater EVER! He will not eat his veggies at all. Most of the time I am sneaking them into dishes like this. He hasn't a clue. To me the vegetables in the meat sauce only make the sauce taste better adding tons of extra flavor. This recipe is my tried and true bologense sauce. I have been making it for quite a few years now.

Happy October! I can't believe it's finally feeling like fall around here. I think I can finally put the flip flops away. Every time I make beef stew I always have leftovers like this Cola Beef Stew. My sons favorite thing to eat during the fall is chicken pot pies. I have had some puff pastry staring at me every time I open the freezer so I decided to make these. Yes it really was staring at me. So simple and yummy and no canned cream of anything. Well they were a hit. They were ready for him when he came home from school. Teenage boys are always hungry after school. With the kids back to school and homework starting I sometimes find myself looking for shortcuts when it comes to making dinner. Some nights we are just so pressed for time. Whether they are pre-made or I made them and froze them, I always have chicken tenders or nuggets on hand in the freezer. I always try to make my own and freeze them but sometimes the frozen bag has to work. They really do make life easier sometimes.

And so it is the official end of summer. How ever being that we live just a few blocks from the ocean I will plant my butt in that sand until it gets to cold to do so! The kids start school tomorrow! Ahh oh so bittersweet it is for me. I will miss them but I will love the piece and quiet as well. I just love macaroni salad. Make your own croutons, ya heard? Yes you can make them and it is so dang easy to! Why buy the ones on the plastic package that comes from who knows where. You can save money by making these yummy little pieces of toasted bread. Don't get me wrong you can still purchase them from the grocery store but then one...you cant say you made them and two...well they just aren't that fresh! Now to take it a step further these happen to be coated in a garlic bread mixture.

What is it about the crumb topping on any kind of cake or bread that makes you want to pick it off and eat it? Apparently someone else in my house fells the same way because I woke up this morning and found a quarter of the bread that way! I guarantee it was one of the boys. Just saying.....sorry boys but you know you did it! I have been trying to get into baking a tad more to give you guys some more yummy baked treats. I just love banana bread. With back to school rapidly approaching and summer coming to an end I wanted to get a jump start on meal planning for my daughters lunches. She despises school lunch so everyday I am trying to come up with new and exciting ideas to make her smile when she opens that lunch box. I also try to involve her in the planning as much as possible. We always include a fruit, veggie, lean protein and whole grain. She is totally ecstatic to be returning to school. While we are having a great summer off she misses her friends and I miss our routine. I guess it is a bit bittersweet. We took our usual shopping trip to our local WALMART Super Center and she picked out Del Monte Fruit Burst Squeezers up off the shelves. I always find the lowest price at my local WALMART Super Center, so I typically pick these up while I am doing my weekly shopping with my little shopping buddy.

I have an extreme love affair with Mexican food. Like I drive 45 minutes just for an enchilada. Maybe that is more like an addiction? So I have seen this recipe hundreds no probably actually thousands of times all over Pinterest . We do not have a Cafe Rio anywhere in NY. Since I could not try their delicious looking food I opted to make my own. Well it did not disappoint. I tested this recipe a while back and did not care for it. I decided to make it again and this time it came out perfect with a few tweaks. I changed the recipe a bit to make it have a tad more flavor. I can tell you it was delicious! I used the chicken to make tacos. A total time saver and I could freeze the leftovers to use for anything else in the future. I all about saving time and freezing things. Have a fabulous weekend all!

Every time I think caprese it reminds me of summer. Mainly because of the gorgeous fresh tomatoes that go along with it. This Caprese Flatbread has the perfect combination of fresh summer plum tomatoes, fresh mozzarella cheese and beautiful green basil. Being that it is summer, to feed my pizza addiction I opted for a much much lighter version. This whole meal is done in 15 minutes! It is a perfect weeknight dish. Make it for lunch, dinner or just a snack. It is also an all year round treat. It doesn't just have to be summer. You could also double and triple it to serve to a crowd.

I can not believe summer will be over pretty soon. They kids will be back to school and I for one am looking forward to just getting back into our routine. As always with summer come delicious grilled everything! Being that we do not live where its warm all year round I grill as much as I can from start to finish. I just love trying out new things to grill like my Grilled Summer Fruit Salad. We eat a lot of chicken in this house. Besides pasta it is always my go to meal to make for dinner. Whats better than grilled summer vegetables? I know! Grilled summer vegetables stuffed with Italian cheeses that's what! If you are looking for a beautiful dish to impress guests with this is it. Eggplant can be made in so many different ways in sauces, stuffed, grilled, baked, fried the list goes on and on. This dish is so simple to make. Typically in this dish you would put tomato sauce on top of it. Just to switch things up a bit I opted for some sun dried tomato pesto. Let me tell you it was so good and it looks so pretty. Who doesn't like pretty food? I was never a big fan of eggplant growing up. As a got older and broadened my food tasting horizons I now have kind of a foodie crush on it.

Today is a special day in our family! My baby girl Miss Maddie Leigh turned 9.
Sigh.....and maybe a tear....or two....or three....no hysterics I promise! We will be celebrating the weekend away. Lot's and lot's to do! Ok onto this delectable dish. There is nothing better than fresh summer fruit. Have you ever had grilled fruit? If you have not you are totally missing out big time! When fruit is grilled it gets a little softer and the natural sugars caramelize leaving beautiful grill marks and an extra layer of flavor.

What are everyone's plans for this upcoming weekend? My little girl turns 9 Friday! It really makes me wan't to cry. We will be celebrating all weekend. She will have a taco bar and zebra themed party. Hey what does one have to do with the other? Nothing! But this makes her happy. Now onto the recipe...I have been dying to make this dish. I have always seen it with chicken but never pork. Sooooo me being me and always daring to be different, here you have it. Stuffed pork chops, I just love them. But these right here well definitely are not your average stuffed pork chop. Inside is the ooey gooey goodness of a jalapeno popper and the outside is crispy smokey bacon brushed with yummy bbq sauce.

We have been very luck so far t his summer that it has not been to hot. 85 being the hottest day so far. I'm sure as soon as August hits it the temperature will skyrocket. To beat the heat I love to make a great cocktail in the summer. Instead of a vodka or rum cocktail I opted for a much different version. I realized that I have not posted a cocktail recipe in forever. So here is a pretty serious one at that. If you have never tried moonshine you are missing out. While I can't drink it straight or even the white lightening version, this is a nice cocktail version to have. Don't get me wrong it still packs punch hence the name.

Shrimp on the "barbie"! We love shrimp cocktail in our house. I make it more than the normal person. In the summer months we grill so much that I am always looking to change things up in anyway I can. I also love grilled shrimp and grilled shrimp cocktail. They are done in 8 minutes! How can you beat that? When they are grilled the shrimp get a nice smoky flavor from the grill and then are brushed with sweet and tangy and slightly spicy cocktail sauce. Serve with lemon wedges and more sauce.
