{Slow Cooker} Ham and Split Pea Soup

What do you all eat as your main dish for Christmas? Beef, Ham, Pork, Pasta, Lasagna???? Well if you happen to make the Christmas ham which always has some leftover, I give you the ultimate left over soup to make. My dad has been making this soup for as long as I can remember. This year since my schedule has been so hectic I decided to make it in the slow cooker. Well this totally did not disappoint in any way shape or form.

Ricotta and Salami Crostini

I hope everyone's ready for Christmas! I am just about there. Just some last minute gifts and wrapping to do. Every year we split Christmas eve, day and evening between all the in-laws and parents. We get spread pretty thin but it's worth it all. So being that we have all these places to go I always make a dish, or appetizer.

Not only do they have Eat Smart Salad Kits, they also have Stir Fry Kits are the fast and flavorful way to eat your veggies every day. Each kit is packed with five to seven delicious and beneficial superfoods.

Overnight Eggnog French Toast Casserole

You guys it's pouring here. Like raining cats and dogs nor'easter style pouring. I wish it was snow. Snow is so much prettier. So I am not leaving my house and I am not getting out of my Pj's at all today! I am going to make slow cooker chowder and stay warm. Just thought I would share that with you. Now onto this fabulous dish. I love french toast. I love french toast in every way shape and form. Stuffed, baked, casseroles like this.

Apple Pie Sangria {Holiday Cheer}

A friend of mine had given me a bottle of apple pie vodka. Interesting right? It had me intrigued. Not something I would normally drink. So after giving it a taste test it became apparent that it needed to turn into sangria. It was the best sangria I have ever has ever! It was meant to be and there was none and I mean none left.

Caramelized Honey Balsamic Brussels Sprouts with Pancetta

Wow December already! November flew by. Time to go into full swing Christmas mode. I hope you all had a wonderful holiday. If you follow me here you may have seen that right before Thanksgiving my lovely farmer friends gave us and abundance of fresh cut winter veggies. There was so many I had to give a ton away! Thankfully I had not gone shopping for Thanksgiving yet. So needless to say we had a smorgasbord of veggie sides for Turkey day. One dish included these. I make them every year but this year I decided to change things up a bit.

Caramel Pecan Cinnamon Rolls

I can remember as a child eating Little Debbie pecan rolls. They were surely my favorite snack. Just the other day it popped into my head that I have not had anything like them for years! Now I remember why I loved them so much after recreating them with these.

Chicken Parmesan Casserole

For years I can remember my grandmother always having a tub of I Cant Believe It's Not Butter in her fridge. She would always butter our bread for Sunday dinner with it. Sunday dinner usually consisted of homemade sauce, spaghetti, bread slathered with I Can't Believe It's Not Butter and a yummy salad.  As I got older and learned to cook on my own I always bought it. I Can't Believe It's Not Butter surely does taste like the real thing! Gotta follow in grandmas foot steps right? Until this day I always have a tub of it in my fridge. It makes the perfect spread for a grilled cheese sandwich or on your morning toast.

Roasted Butternut Squash Soup

Is everyone ready for Thanksgiving? Minus the whole shopping part my menu is planned and ready to be executed! I cook for a crowd every year. Thanksgiving is one of my favorite holidays. I just love the family gathering around good food. One thing I don't have to worry about is dessert. Thank goodness! I so didn't want to bake at all ever. The end!

Individual Sweet Potato Boats

With the holiday season in full swing I realize I am seriously having a hard time letting go of summer. It just gets so cold here! I do love the fall but winter is my nemesis. We just took down the Halloween decor and I have not even given the Christmas trees a thought yet. One holiday at a time is my motto. Thanksgiving is one of my favorite holidays. To me just having the family together all sitting down and eating really good food, well there is nothing better!

The Ultimate Patty Melt

Sometimes you just have to change up the good old american burger. I definitely accomplished that with this Patty Melt. It is the ultimate man sandwich to. I made it for the other half and well he was stuffed. Easy peasy and quick to! This is a perfect quick weeknight dinner. Serve it alongside some tator tots, fries or onion rings.

Red Robin Copycat Campfire Sauce

All I can say is TGIF. What a week! From sick kids to pouring rain I am so glad it's over. Remember these awesome Tator Tots? Well I have had several requests for the sauce on the side. Here yee have thee! This stuff needs to come with a warning label. It's highly highly addictive! We don't have a Red Robin in our parts. In fact we lack quite a few of the well known chain restaurants. I was browsing the old innerweb and came across this stuff. It  sure did sound intriguing I must say.

Baked BBQ Sweet and Sour Chicken {Freezer Meal}

I am not ready for winter. Setting the clocks back and it now getting dark at 4:30 pm well just sucks. I am such a summer girl. I love how it gets dark at 8:30 pm and it's nice a warm not freezing at dark. If I wan't freezing and dark I will go in the house in the a/c and turn the dang lights off! The joys of living on the east coast. But there is a ton of great things to!
So this dish right here let me just tell ya it's so good! If both my kids ate it, it's good.

Hidden Veggie Tortellini Bake

Ahhh comfort food! How I love thee so! Not to mention this version is hiding veggies and your kids will never know. Mine sure didn't. My son is the worst eater EVER! He will not eat his veggies at all. Most of the time I am sneaking them into dishes like this. He hasn't a clue. To me the vegetables in the meat sauce only make the sauce taste better adding tons of extra flavor. This recipe is my tried and true bologense sauce. I have been making it for quite a few years now.

Autumn Harvest Panini

I realized that I have an obsession with making panini's. They are so easy to make and what's better than a crusty piece of bread smooshed and toasted with yummy fillings? Nothing that's what! OK maybe there's a few things like those tator tots. Not even half of them make it on this blog. That's because they are gone before I can even take a picture.

Fully Loaded Stuffed Homemade Tator Tots

OK so these are the best and I mean the best damn tator tots eva! I can not believe how awesome they turned out. I will admit I had to play around with this recipe a bit. I originally wanted to bake them. So I did and it failed....epically. Everything oozed out and made a big mess. So into the fryer they went. Sometimes you just have to fry things.

There is something just delicious about anything apple cooked, baked, sweet or savory.

Autumn Kale & Kiwi Berry Salad

Ok It's happened. I have finally succumbed to the kale bandwagon. Now I have had it here and there but not on a regular basis. I cannot believe what I was missing! My kids did not even notice the difference in the salad...hehehe. I love sneaking healthier things in their meals. How about this Autumn Kale and Kiwi Berry Salad! Isn't it pretty? Keep reading for some more info on those adorable little berries.

Chicken Bacon & Avocado Ranch Flatbread Pizza

Here is another super simple easy weeknight meal that your family will surely love. I have been on this easy dinner kick lately. Everyone loves pizza right? We only have one free weeknight in our house this school year so fast and easy dinner ideas are a must. I refuse to succumb to the drive through.  I just wont do it!

Beef Pot Pie Hand Pies

Happy October! I can't believe it's finally feeling like fall around here. I think I can finally put the flip flops away. Every time I make beef stew I always have leftovers like this Cola Beef Stew. Which is my all time favorite by the way. I can't stand to see leftovers go to waste so seeing that my Chicken Pot Pie Turnovers were such a hit I couldn't resist making these. Handy dandy comfort food at its best. Whats not to love.

Soft and Chewy Double Chocolate Chip Cookies

Treat yourself to a sweet treat with these perfect Soft and Chewy Double Chocolate Chip Cookies! The perfect combination of semi sweet chocolate and sweet white chocolate chips. What is it about cookie dough that is just happiness in a bowl? It's a sort of addiction to just want to eat it!

Cranberry Turkey Pinwheels

Are you the person that eats cranberry sauce with their turkey on Thanksgiving? Well then do I have a treat for you!  To me there is nothing better than after dinner sandwiches on Thanksgiving. Mine will usually consist of turkey, cranberry sauce, mayo, salt, and pepper, on a pumpernickel rye.  But since that is pretty much only a once a year thing I give you these. I promise after you give these a try you will want them for breakfast lunch and dinner.

Apple Fries Fritter Style

I absolutely love these! I will forever have a love for fried foods. How ever I try to stay far away from them. But sometimes things like this pop into my head and all that will power goes away. Everything in moderation right? Just the fact that they are fries makes you feel better about eating a whole fritter.

Wednesday, September 17, 2014

Chicken Pot Pie Turnovers

My sons favorite thing to eat during the fall is chicken pot pies. I have had some puff pastry staring at me every time I open the freezer so I decided to make these. Yes it really was staring at me. So simple and yummy and no canned cream of anything. Well they were a hit. They were ready for him when he came home from school. Teenage boys are always hungry after school. Heck they  are just always hungry all day every day!

Spiced Pepita Bacon Brittle

I am so loving this fall weather we have been having here in NY. two weeks ago it hit 90 and this morning as I write it's 50 and I'm in a sweatshirt. With that being said let's talk fall foods. I don't know about you guys but I am so happy to use the oven and slow cooker again.
All the amazing flavors and ingredients that go along with fall are oh so inspiring.

Three Cheese Stromboli Rolls

I make stromboli about once a month. It's requested a lot in our house. Instead of making the traditional bake and slice version I opted for the slice then bake version. I also played with the ingredients a tad bit to change it up considering I make it so much.

Dutch Oven Artisan Bread

With fall on the way I am happy to start using my oven again. Strangely enough it has been in the 90's all week here in NY. It was cooler in August. I still have my air conditioning on but can't wait to keep the windows open every day. I have been planning on starting to bake a bit more.  Baking is not one of my stronger suits.  It is something I look forward to working on this fall and winter.

Bacon Jalapeno and Cheddar Jack Chicken Strips

With the kids back to school and homework starting I sometimes find myself looking for shortcuts when it comes to making dinner. Some nights we are just so pressed for time. Whether they are pre-made or I made them and froze them, I always have chicken tenders or nuggets on hand in the freezer.  I always try to make my own and freeze them but sometimes the frozen bag has to work. They really do make life easier sometimes.

Perfect Tuna Mac Salad

And so it is the official end of summer. How ever being that we live just a few blocks from the ocean I will plant my butt in that sand until it gets to cold to do so! The kids start school tomorrow! Ahh oh so bittersweet it is for me. I will miss them but I will love the piece and quiet as well. I just love macaroni salad. This has all the traditional fixings, pasta, dressing, pepper, onion, carrot and tomato.

Spinach Ham and Cheddar Fritatta

Remember those Oven Roasted Home Fries from Wednesday? If you read my post you will remember I said I always serve my eggs with home fries or home fries with eggs.
Nothing looks more elegant than a fritatta on the breakfast table. This Italian-style omelette called a frittata, is a simple, delightful egg dish for brunch or a light dinner. This has minimal ingredients and is ready in under 20 minutes!

Oven Roasted Home Fries

Do you have a favorite breakfast place you frequent? Most that we have gone to always serve your eggs with a side of home fries. I swear I could just eat the home fries for breakfast. I actually have; shhhh. Oh how I love spuds. I am a total meat and potatoes kind of girl. I make a big breakfast every Sunday for our family. Unless my potatoes are in my eggs these are always on the side. The peppers and onions make the whole dish.

Cheesy Roasted Cauliflower

I can not believe school starts in a week for my kids. Where has the summer gone? I am always looking for easy and yummy ways to get my kids to eat their vegetables. My little one loves almost all the vegetables. My older one not so much. He is so picky. So everything tastes better with cheese right? Well here you have it!

Homemade Garlic Parmesan Bread Croutons

Make your own croutons, ya heard? Yes you can make them and it is so dang easy to! Why buy the ones on the plastic package that comes from who knows where. You can save money by making these yummy little pieces of toasted bread. Don't get me wrong you can still purchase them from the grocery store but then cant say you made them and two...well they just aren't that fresh! Now to take it a step further these happen to be coated in a garlic bread mixture.

Banana Crumb Bread

What is it about the crumb topping on any kind of cake or bread that makes you want to pick it off and eat it? Apparently someone else in my house fells the same way because I woke up this morning and found a quarter of the bread that way! I guarantee it was one of the boys. Just saying.....sorry boys but you know you did it! I have been trying to get into baking a tad more to give you guys some more yummy baked treats. I just love banana bread. Banana bread tastes even better with crumbs on top. As I said a few sentences back.

Back To School Lunch with Del Monte

This shop is part of a social shopper marketing insight campaign with Pollinate Media Group® and Del Monte, but all my opinions are my own. #pmedia #DelMonteBTS

With back to school rapidly approaching and summer coming to an end I wanted to get a jump start on meal planning for my daughters lunches. She despises school lunch so everyday I am trying to come up with new and exciting ideas to make her smile when she opens that lunch box. I also try to involve her in the planning as much as possible. We always include a fruit, veggie, lean protein and whole grain. She is totally ecstatic to be returning to school. While we are having a great summer off she misses her friends and I miss our routine. I guess it is a bit bittersweet. We took our usual shopping trip to our local WALMART Super Center and she picked out Del Monte Fruit Burst Squeezers up off the shelves. I always find the lowest price at my local WALMART Super Center, so I typically pick these up while I am doing my weekly shopping with my little shopping buddy.

Cafe Rio Chicken

I have an extreme love affair with Mexican food. Like I drive 45 minutes just for an enchilada. Maybe that is more like an addiction? So I have seen this recipe hundreds no probably actually thousands of times all over Pinterest . We do not have a Cafe Rio anywhere  in NY. Since I could not try their delicious looking food I opted to make my own. Well it did not disappoint. I tested this recipe a while back and did not care for it. I decided to make it again and this time it came out perfect with a few tweaks. I changed the recipe a bit to make it have a tad more flavor. I can tell you it was delicious! I used the chicken to make tacos. A total time saver and I could freeze the leftovers to use for anything else in the future. I all about saving time and freezing things.  Have a fabulous weekend all!

20 Easy Slow Cooker Recipes For The Busy Cook

With school starting soon for us I like to make dinner as easy as possible. Between extra curricular activities and homework I always find myself pressed for time to cook dinner. I have dug into my archives to give you some really great slow cooker dinner ideas.
These particular recipes are my favorite ones that we eat all your round. I sometimes feel the need for comfort food in the summer. You can't beat the convenience of a slow cooker when you are pressed for time like me. Throw it all in and walk away!

Caprese Flatbread Pizza

Every time I think caprese it reminds me of summer. Mainly because of the gorgeous fresh tomatoes that go along with it. This Caprese Flatbread has the perfect combination of fresh summer plum tomatoes, fresh mozzarella cheese and beautiful green basil. Being that it is summer, to feed my pizza addiction I opted for a much much lighter version. This whole meal is done in 15 minutes! It is a perfect weeknight dish. Make it for lunch, dinner or just a snack. It is also an all year round treat. It doesn't just have to be summer. You could also double and triple it to serve to a crowd.

Herb Marinated Chicken Kabobs

I can not believe summer will be over pretty soon. They kids will be back to school and I for one am looking forward to just getting back into our routine. As always with summer come delicious grilled everything! Being that we do not live where its warm all year round I grill as much as I can from start to finish. I just love trying out new things to grill like my Grilled Summer Fruit Salad. We eat a lot of chicken in this house. Besides pasta it is always my go to meal to make for dinner. Mainly because it is just so versatile and pretty easy to conjure up something new with.

Grilled Eggplant Involtini

Whats better than grilled summer vegetables? I know! Grilled summer vegetables stuffed with Italian cheeses that's what! If you are looking for a beautiful dish to impress guests with this is it. Eggplant can be made in so many different ways in sauces, stuffed, grilled, baked, fried the list goes on and on. This dish is so simple to make. Typically in this dish you would put tomato sauce on top of it. Just to switch things up a bit I opted for some sun dried tomato pesto. Let me tell you it was so good and it looks so pretty. Who doesn't like pretty food? I was never a big fan of eggplant growing up. As a got older and broadened my food tasting horizons I now have kind of a foodie crush on it.

Grilled Summer Fruit Salad

Today is a special day in our family! My baby girl Miss Maddie Leigh turned 9.
Sigh.....and maybe a tear....or two....or hysterics I promise! We will be celebrating the weekend away. Lot's and lot's to do! Ok onto this delectable dish. There is nothing better than fresh summer fruit. Have you ever had grilled fruit? If you have not you are totally missing out big time! When fruit is grilled it gets a little softer and the natural sugars caramelize leaving beautiful grill marks and an extra layer of flavor.
Have a fantastic weekend!

Bacon Wrapped Jalapeno Popper Stuffed Pork Chops

What are everyone's plans for this upcoming weekend? My little girl turns 9 Friday! It really makes me wan't to cry. We will be celebrating all weekend. She will have a taco bar and zebra themed party. Hey what does one have to do with the other? Nothing! But this makes her happy. Now onto the recipe...I have been dying to make this dish. I have always seen it with chicken but never pork. Sooooo me being me and always daring to be different, here you have it. Stuffed pork chops, I just love them. But these right here well definitely are not your average stuffed pork chop. Inside is the ooey gooey goodness of a jalapeno popper and the outside is crispy smokey bacon brushed with yummy bbq sauce.

Rainer Cherry Summer Punch

We have been very luck so far t his summer that it has not been to hot. 85 being the hottest day so far. I'm sure as soon as August hits it the temperature will skyrocket. To beat the heat I love to make a great cocktail in the summer. Instead of a vodka or rum cocktail I opted for a much different version. I realized that I have not posted a cocktail recipe in forever. So here is a pretty serious one at that. If you have never tried moonshine you are missing out. While I can't drink it straight or even the white lightening version, this is a nice cocktail version to have. Don't get me wrong it still packs punch hence the name.
Happy Monday!

Grilled Shrimp Cocktail Kabobs

Shrimp on the "barbie"! We love shrimp cocktail in our house. I make it more than the normal person. In the summer months we grill so much that I am always looking to change things up in anyway I can. I also love grilled shrimp and grilled shrimp cocktail. They are done in 8 minutes! How can you beat that? When they are grilled the shrimp get a nice smoky flavor from the grill and then are brushed with sweet and tangy and slightly spicy cocktail sauce. Serve with lemon wedges and more sauce.
