Pulled BBQ Chicken Sliders with Southern Coleslaw

I've been on a "sangwich" kick lately. Technically all summer due to the amount of grilling we do. Instead of the traditional pulled pork I decided to find a grilled chicken version. Well it was delicious. Sweet bbq sauce with the zingy crunchy southern slaw. So good!

Basil Butter Hasselback Potatoes


I am so happy to say our heat wave has ended here in NY. It is still a tad humid by us but that comes with the territory of beach life. There is nothing better than an ocean breeze at night coming off the bay it literally drops 20 degrees. I was also happy to be able to put my oven on again. I was a little grilled out. I have never made hassselback potatoes so I came up with this version. They were delicious. I love basil, garlic and butter of course, they go oh so well together.

Marinated Five Bean Salad




 Growing up my dad would make this salad all the time. Even just for dinner. It is a great way to get the kiddies to eat their veggies and protein. My daughter gobbled it right up. It's a delicious combination of five beans and yummy homemade Italian marinade. You could also take this to a cookout, it's mayo free and is such a nice change from the regular stuff. It makes a large amount so you will have to feed a crowd or eat it all week long.

Grilled Steak Fajita Quesadillas

Sometimes you just need to change thing up a bit. I have a serious love of all kinds of Spanish and Mexican foods. Everyone loves fajitas right? Why not make it a quesadilla? I am so glad I did. Thin slices of steak, peppers, onions and we cant forget the cheese! This time I grilled them instead of just cooking them a flat skillet. Grill marks are so purdy. There is also a trick in the cooking directions to make your quesadillas never fall apart again, along with it helping with portion control. hehe

Chicken Banh Mi with Sriracha Aioli


A traditional Banh Mi is a Vietnamese sandwich made with pork and a lot of fish sauce. Well I totally omitted the fish sauce. No thanks...yuck! It worked out great with my substitutions. 
  I am so in love with this sandwich. I had it a few weeks ago at a small bakery that is totally organic and only uses the freshest ingredients. I dream of this place because it was that good.
I must go back. It's worth the hour drive west. So I had to make it. What I like about this sandwich is there is no cheese, it's not really slathered in sauce and the crunch of the pickled cucumber and carrots is just so good!

Blueberry Fields Salad




Hot enough for you? It's been in the mid 90's here all week in NY. So hot that my 7:30 pm breeze has been non existent. I look forward to that breeze every night. I guess I will take the heat any day over the freezing winter. I do love summer I also just love summer salads.
The possibilities are endless. The abundance of fresh farm fruits and vegetables is just great during the summer months. There is nothing better than going to the farm stands and the farmers market. Long Island is filled with farms on our east end. Many weekends I find us just taking the short drive a little further east to see what farms we come across and what they have to offer. This salad was an inspiration from some fresh blueberries that were picked up from a local farmer.

Maple Infused No Bake Baked Beans



Simple and delicious. Quick and easy serve with your favorite BBQ food. Cooked on the stove top, this is a great shortcut to the traditional baked in the oven all day beans. Serve them along with a nice steak or grilled chicken, even dip some cornbread into these bad boys. They are a staple at our table during grilling season.

Potato, Ham and Cheddar Fritatta


 I like my eggs fluffy and well risen when I make fritatta's. They are so easy to make. I love combining a bunch of ingredients like this, baking them off and wallah you have breakfast! Heck even lunch or dinner if you like. Just mix all the ingredients up and pop it in the oven in about 30 minutes its done. I hope everyone had a fabulous weekend!

BBQ Chicken Breast with Homemade Honey BBQ Sauce

Love me some barbecued chicken. Actually I love me some barbecued anything. You know it's summer time when all you do is grill anything you can find.  These baby's are super saucy with a sweet honey bbq sauce. They are perfect for your fourth of July cookout. Serve alongside some corn and my Perfect Macaroni Salad.

Perfect Macaroni Salad



Can you believe it is already July! How did this happen? What are everyone's plans for the big day? We have the usual party bbq to go to. The kids will play, splash and watch a firework show. This salad will be in tow with me on Thursday. It is my grandmothers recipe and I make it quite often throughout the summer months. I urge you to give it a try. I promise you will love it!
