Avocado BLT Benedict's





How was everyone's weekend? Mine went to fast as usual. 
Grab a for and knife these a soooo good and healthy! A total twist on the classic BLT. Poached egg a top crusty toasted bread with bacon lettuce tomato and avocado! Have them for breakfast, brunch, lunch, heck even dinner.

Ham and Pineapple Naan Pizza



Another pizza recipe. But this one is oh so special. This one truly is one of my favorite pizzas. The secret is you have to add the sauce. I have had this pizza with no sauce and well it is just not the same. I am not quite sure how all these ingredients come together so well but they do! You have the salty tomato sauce, yummy mozzarella cheese, smokey ham, sweet peppers and even sweeter pineapple. YUMMY!!! I hope everyone has a great weekend! It's finally warming up here in NY.

Ranch Smashed Potatoes

Is it really Monday already! Wahhhh. I wish the weekend was longer. Crash Hot Potatoes? Hot Crash Potatoes? Smashed Potatoes? Whichever! There are oh so many yummy variations of these. I have made many myself. This version is ranch and man is it good! I would defiantly serve them alongside tomorrows recipe.

Flashback Sundays: White Chicken Lasagna Roll Ups


This is one of my favorite pasta dishes.
This lasagna comes dressed to the dinner table all frilly and rolled up!  Not to mention portion control. All you will need is one. They are such a different spin on traditional lasagna and a snap to make. I thought for sure they would be a little challenging, not at all. You can even make one at a time. Now you wont be left with an entire tray of lasagna.

Cheddar Dill Drop Biscuits (A Forgotten Recipe)



How is everyone's week going so far? Mine is hectic as usual. My son started playing golf and it has overtaken my life. But it's a great thing! 
We all know those cheddar bay biscuits right? Well these are primarily the same thing with the addition of a few ingredients and dill. Not only did they come out better they were just different, which I like!

Garlic Naan Pizza With Roasted Tomato Sauce

Pizza! I love, love pizza! I even love it cold for breakfast. I know I'm weird. But when you are Italian and from New York you more than likely have a serious love affair with pizza. What an easy way to make pizza with the use of Naan. It's a'ready cooked all you need to do its top it off, basically with whatever you want. I chose fire roasted tomatoes this time for a sauce, then mozzarella cheese and tomatoes with a sprinkle of fresh basil. This sauce is super good and simple I mean simple to make. You an make these ahead of time and freeze then also. I also may have a love affair with fire roasted tomatoes don't ask!

Cheesy Hash Brown Casserole



OMGOSH....have you ever eaten this at Cracker Barrel? First of all it is one of my very favorite places to go when we travel up to the mountains. We don't have one here on the island. Cheesy potatoes baked to perfection. I usually am totally against using canned cream of anything soup but, I had to cheat here to get the same effect and taste. I can cheat once in a while!? So if you want a really awesome breakfast, brunch or heck even dinner side dish here it is!

Roasted Asparagus Salad With Citrus Dressing





Asparagus....I have a love hate relationship with this almighty veggie. Love meaning I love to cook it and use it in dishes like this one. Hate meaning well I hate the way it tastes! So this salad was reviewed by my dinner guests and it was a hit! It must taste pretty good. I did eat the salad without the asparagus and the dressing was out of this world. I would defiantly use this dressing again and again. I hope everyone had a great weekend!

Flashback Sunday: Almond Joy Brownies


Can you say heaven, yes that is what these are. I don't know if it's the almond, the coconut, or chocolate...but they are one divine treat. I love brownies also. You won't see me posting to many baking recipes here. I am no baker, at all, in any way shape or form. Mainly because I hate to measure, and can be a bit impatient at times. I'd rather cook 24-7.  Measuring like Rachel Ray. A palmful of this a pinch of that. It always comes out better that way. So on the rare occasion you do see something baked it may have short cut ingredients in it. That's just how I roll.

Garlic Shrimp With Blistered Tomatoes


I must really be in the need of warmer weather. I am over the comfort food dishes, well maybe, most likely not! I don't know that I ever will be. I have just been craving lighter and easy dishes. This one offers both. Shrimp tossed in a garlicky lemon wine sauce over pasta! I want it again for dinner! Plus it ready in under 30 minutes. You can't beat that. If you aren't a seafood lover you an easily substitute the shrimp with chicken.

Slow Cooker Italian Stuffed Peppers

How was everyone's weekend? I hope everyone had a "Hoppy Easter". 
This dish is a total time saver. If you have a hectic weekday schedule like my family does, this is the dish for you. I love setting everything up before work and coming home to dinner all done. I make a few different versions of stuffed peppers this is the easiest. No par boiling required for the peppers just set and forget!
