I was recently contacted by the awesome folks over at The Chef's Emporium. Well they told me I could pick anything, yes anything from their site and give it a whirl. So many options; what's a girl to do? Well they they happen to have these adorable aprons in a gazillion colors and oh you can have them personalized any way you want to! How cool is that? It was way cool because I got this adorable apron made up shipped to me. I will no longer have little splatters of god knows what on my shirts. We have all had them. So I now have this cute apron with an awesome design I got to pick myself right down to the font I might add. So if you are in the market for an apron or even kids chef coats which are adorable to, check out The Chef's Emporium. They even have chefs knives. Now onto this dish. I decided to substitute the sage for spinach on the chicken. One because I had none and two I just love spinach. There was a slight difference in the taste but I liked this better.
Not only did I forget about this post, I haven't even made it since!! It is on the menu this week for sure. If you love pesto this dish is for you. Pasta, chicken, pesto and cheese. Oh my! Campanelle pasta is like pretty little flowers. It is great for soaking up just about any sauce you put on it. This version I came up with after trying a few pasta recipes with pesto. I am not a huge fan of pesto and usually only use it in moderation. How ever this one turned out pretty good. Hope you enjoy it!
Yum! These bowls of deliciousness are oh so good. Not to mention super fast and easy for a weeknight meal. These days I am all about easy weeknight meals. I feel like this can fall into the category of a TV dinner but so much more healthy and not frozen. I put the ingredients for the toppings in the recipe how ever you can add whatever toppings you like. And there is no bread, so it is a completely gluten free meal. I hope you like it!

for lunch and scarf down a quick bite. That seems to be what I always make. This sandwich right here is a-ma-zing!! Honey ham, Monterey Jack cheese with honey mustard sauce all toasty and melted together, woo weee! I hope you like it as much as I do!

I am as Irish as they come. Right down to the milk white skin, freckles and green eyes. Well with a bit of Italian and a few other things; you would never know it. It is a family tradition to make Corned Beef and Cabbage every year in my family. Along with my grandmothers Irish Soda bread. We all get together and have a big feast to carry on my grandmothers legacy, along with drinking one Irish beer. Well...she drank one Irish beer I may have had a few more. Need a new go to cake? Tired of plain old boring banana bread or cake? Not that the regular version is all that boring; I actually really like it. But with this coconut frosting OMG! It took banana cake to a whole new level. I love, love, love coconut in every form in every food. I may have a slight addiction to it. With that said here is the yummy recipe!
Roasted veggies oh how I love thee. All of them every single kind, roasted in the oven tossed with any seasons your heart desires. These are quite simple, olive oil, salt pepper, garlic and lemon. Yum! They compliment any dish nicely. It's getting warmer here in NY. Today will be almost 50! My snow drops have bloomed in the front yard. Spring is on it way!!!
