What's your Super bowl plans? Are you having a big shindig, small gathering or just making some snacks and hanging with the family? I am still undecided. I will be making some snacks and watching the commercials. I don't do football. It's just not my thing. Maybe some of the family will stop by will knows! Now onto the recipe...No muss no fuss. Set it and forget it. This dish could not be easier! I love using my slow cooker. Especially this time of year. It's perfect for a busy day when I have to run the kids around.

I love sandwiches. I really love sandwiches. It goes hand in hand with my carb addiction. But this sandwich is well just one of my absolute favorites. Turkey, bacon, lettuce, tomato, cheese and mayo all on a toasted sweet roll. Amazing! Make one or make a whole bunch for your super bowl party. You could even make them in a mini version for a cocktail sandwich. Either way they are just good. Happy Monday!

Chowda baby! Can you believe I have never eaten or made this until now! What is wrong with me? Where has chowder been all my life? It's so good and so easy to make!!! I didn't know what it was even suppose to taste like so I had my taste tester check it out. Only thing he said that was missing was pepper. He pepper overloads everything so it may have just had enough.

I love pizza. I really really love pizza! I can eat it cold for breakfast. That's so wrong hence the carbohaulic anonymous meetings I need to attend regularly; if they possibly existed. My kiddies wanted something for lunch and they also love pizza and quesadillas so I threw these together quickly. They were good. I still prefer the real pizza over these. The kids enjoyed them and they were easy to make.

This is my favorite dish to eat from the Chinese menu. Ok maybe along with steamed dumplings, lo mein, and general tso's chicken. I never knew how easy it was to make until about a year ago when I finally mastered it! Plus you know where it's coming from. Put this along side my pineapple fried rice and you have a simple easy quick meal. If you don't want to fry the chicken you can easily bake it at 350 for 15-20 minutes. Another one of my vices fried food; ugh! I just have to indulge once in a blue moon. If you love Chinese and need a good go to dish to make at home give this try! I hope everyone stays warm (we have snow finally here on the island) and has a great week!

Happy Monday! I have always had a love affair with Chinese food. Fried rice is just soooo good! The delicious sweet and savory combination of pineapple, carrots, peas, and green onion, quickly wok-fried with rice will be a family favorite. It is so easy to make and a perfect partner to my Orange Chicken. (Recipe to follow tomorrow).

We love hot wings in our house. Even my little one will eat them. She loves anything spicy it's to funny. We also love shredded chicken. I have been using it a lot lately just to save time in between cleaning, school, homework, dance, girl scouts and baton twirling. Whef I think that's it! Any who this is a great time saving meal for us busy mommy's. You also could easily substitute the hot sauce for bbq sauce also. If hot sauce does not work in your house. I hope everyone has a great weekend! TGIF!!

I have decided to start eating gluten in serious moderation. I don't know that I could give it up completely I love bread to much! But after reading some pretty interesting things about it in a book called the Virgin Diet I have decided to give it a try. My son has two autoimmune disorders and a slew of other health issues no one seems to have an answer for. After a few discussions with his doctor I have decided to eliminate all gluten if possible from his diet. Lets hope he cooperates he is 13. We all know how that goes. This recipe is my first attempt at making anything gluten free. I had never eaten gluten free pasta before. What I think about it; it had a rice like flavor which was not bad at all. It was much lighter than regular pasta. However it did not hold up very well. It broke apart very easily. I will try a different brand next time around. Feel free to use regular pasta with this sauce if gluten free isn't for you. Wish me luck in converting my boy :)

Is it really Monday again? The weekends fly by so fast I swear. I love Mexican food. I just cant seem to ever get enough of it. I did not want to make a huge dinner one night so I came up with these. So easy to put together. I always like to have shredded chicken on hand. Sometimes I will freeze it and take it out when needed. When all else fail there is always the rotisserie chicken. There is a similar version of these here. You can make these for your game day, Superbowl party whatever!

I have been making these for a few years, well quite a few years. They are just like the ones you get in the cookie assortment from the bakery. Sometimes the have chocolate on them. I opted not to do that this time around. I was a wee bit lazy. If your in the mood for a yummy crunchy super thin candy like cookie, give these a try. They are also easy to make. TGIF!

Oh my oh my! You know how when you go to your favorite restaurant chain and they have the most delicious version of this dip? Well until now I have been completely unable to duplicate it. It's pretty darn close. I did add a few extras for some flavor boosting. This is a perfect dip for a game day treat or heck make it any day for a treat!

I always see eggs being cooked in muffin cups. When you want to put them on an english muffin well they just don't fit! They are to tall and not round enough. So here was my theory; I made them in a whoopie pie pan! They are the perfect fit. I have how ever never made whoopie pies with the pan. Maybe one day. There is a few different ways you can freeze these. You can put them on the english muffin, wrap in parchment and freeze or I wrap them singly, microwave for a few seconds and place on a freshly toasted muffin. I guess it depends on how much time you have. Either way works well. So give them a try and tell me whatcha think ;)

We had a small gathering on New Years Eve and me being me has to make every morsel from scratch I have issues; or so I think...lol. So I had some pie crust and all the other players in these little guys so I decided to give it a try. Well they turned out pretty darn good. Spinach mozzarella Parmesan and feta all nestled into little pastry cups. These lil buddies are great for a party or even a snack!

HAPPY NEW YEAR! I hope everyone's holidays were great! I am glad it's all over honestly. It's a new year! I spent new years day sweeping and cleaning the mess of 8 little kiddies who partied the night away into the new year, then finally they all went home and my kids completely crashed. I actually found a plate under the couch! Ok so onto the chicken. Super moist, super flavorful and only 4 ingredients. Yes 4 ingredients. How easy is that. Did I also mention it's ready in 30 minutes. How can you beat that.
