Blackened Chicken


Super easy, and super fast. This is a fantastic 30 minute meal. So full of flavor. I put mine over a bed of couscous. Any good starch and veggie will do to accompany this. Or you can make it this way ! I hope everyone's ready for all the adorable trick or treaters on Thursday.

Ingredients
4 boneless skinless chicken breasts

For the seasoning
2 tablespoons chili powder
2 tablespoons smoked paprika
2 tablespoons cumin
1 teaspoon salt
1 tablespoon garlic powder
1 teaspoons cayenne pepper, more if you like it spicy
1/2 teaspoon black pepper
1 teaspoon olive oil
* save any extra for next time

Slice each breast in half. You will have 8 pieces. Pound the chicken with a meat tenderizer. Rub each piece generously with seasoning. In a skillet, heat the oil. Add the chicken and cook each side about 5 minutes or until done. It will be blackened. Remove from pan to cool.

Serve with a side of veggies and some couscous.
