Taco Wedge Salad


This is the easiest weeknight meal other than take out. My family just gobbled them right up. They usually don't think of salad as a meal. I on the other hand do. Ground beef, black beans, tomatoes and cheese smothered with thousand island dressing all topped with crispy tortilla strips. You can add any other toppings you like but trust me when I say you must use thousand island dressing. That is what makes this salad oh so good!

1 pound ground beef
1 package taco seasoning
1/4 cup water 
1 large head of iceberg lettuce, cut into 4 wedges
2 large tomatoes, seeded and chopped
1 can black beans, rinsed and drained
2 cups shredded mexican blend cheese
1 cup thousand island dressing
1 cup salad topping tri colored tortilla strips

In a medium skillet over medium high heat brown beef until no longer pink drain any fat from pan. Add taco seasoning and water mix well. Remove from heat seat aside.

Place each wedge of lettuce on a plate. Now start layering your fixings. Spoon the meat over each wedge, followed by the beans, tomatoes cheese and finally drizzle with as much dressing as you like.
