Pasta Marscapone with Ham Peas and Mushrooms






How was everyone's weekend? Mine was really long. I had a party to cater and I'm still pretty tired. This recipe is an oldie but goodie. Super simple to which I my kind of meal.
This is a one dish wonder. Pasta with peas, ham, mushrooms all cooked with a tomato marscarpone sauce. So easy to make and tastes like your eating it from an Italian restaurant.

Ingredients
1 cup diced ham
1 Tablespoon Olive Oil
1 pint Baby Bella Mushrooms, Sliced
1 whole Small Onion, Diced
2 cloves Crushed Garlic
1-16oz Can Crushed Tomatoes
1 teaspoon Italian Seasoning
½ teaspoons Kosher Salt
½ teaspoons Black Pepper
1 teaspoon Sugar
4 ounces, Marscarpone Cheese
1 cup Light Cream
½ cups Shredded Pecorino Romano Cheese
1 cup Frozen Sweet Baby Peas
1 box Rotini Pasta, Cooked
½ cups Parmesan Cheese

Directions
Heat a large skillet on medium heat. Add ham and brown for 2 minutes. Remove from pan and set aside. Add olive oil, onions, garlic and mushrooms saute for five minutes until onions are clear and mushrooms are soft add to ham and set aside. Add crushed tomatoes, italian seasoning, salt, pepper and sugar to pan. Stir well bring to a boil add marscarpone cheese, cream and romano cheese. Lower heat to low and stir to combine until cheeses are melted add the ham and vegetables, mix then add cooked pasta and peas. Toss lightly to combine and top with parmesan cheese. Remove from heat. Serve hot.
