Bacon Ranch Chicken Tostada

What is everyone's weekend plans for the holiday? Going away? Having a cook out? We will be hopefully hitting the outter beach with our 4x4 and having a bbq. 
Let me just tell you how good these turned out. Sooo bleepin good! Quick, easy and total man food! The kids fell in love also. I will defiantly making this for school night dinners.

Creamy Ranch Pork Chops {Slow Cooker}

T minus 7 days until school starts. Whoot Whoot! My house will finally stay clean for more than an hour.  My little darling (tornado) starts the third grade and my big guys starts (tear) ninth grade. His first year in high school. This I am not really ok with. 
Now on to the recipe....This is one of my favorite set it and forget it, saw it a hundred times on Pinterest recipes.  I finally gave it a try a few weeks ago and it was a hit. Anything that's easy and the kiddies like is a check in my book! Especially when its a week night meal!

Let's start Monday off with a super simple and super fresh dish. Who doesn't love a 10 minute side dish? I could honestly eat this for a meal. I {heart} couscous. It compliments just about any protein and it's a winner with the kids. Not to mention it's so purdy! You cant go wrong making this a side with any meal.

Cinnamon Peach Scones

So apparently it is Monday again. How did this happen? Grrrr. Since it is peach season and there are ton's of peach farms on Long Island, I bring you these. I will admit I am not a fan of peach pie. I really don't know why; I just don;t care for it. How ever these scones were delicious. The perfect breakfast treat any day of the week.

Baked Crispy Chicken Nuggets

TGIF! Anyone have any cool plans for the weekend? We will be just trying to get in as much beach time as possible before it gets to cool here. Now onto the recipe. I honestly will never fry another chicken nugget ever again after making these. They are perfectly crunchy. I have made them several times now in different variations, playing the spices.This version is just pretty plain. If you wanted to leave the chicken breasts whole or cut into tenders you could as well.

Tomato Basil Cucumber Salad

Tis the season for all the amazing veggies the summer has to offer. When you just don't want to use the stove to make a dish...just got for this. It literally takes five minutes from start to finish. It is the most simple thing I have made ever; I think. A perfect side for any meal. Not to mention its totally kid friendly.

Turkey Sloppy Joes

I can't believe the summer is almost over! Where did the time go? I have to admit though, that I am kind of waiting for school to start. I need to get back into that groove of a set routine. This dish is perfect for back to school weeknight dinners and is ready in a flash! 
It is pretty healthy also. My kids loved these and gobbled them right up!

Baked Spanish Rice Pilaf

This dish is such a nice twist in ant traditional rice pilaf recipe. Did I mention its baked? Who knew you could bake rice? I made this for a birthday party we hosted for my father in law as a different option from the traditional bbq menu. I <3 any and all Spanish foods. So any time I get to make it I jump at the opportunity because well the hub's isn't so crazy about it. I will never understand! You could always cook it on the stove top just like a traditional rice recipe as well, I have done both.

Layered Jello Yogurt Squares

I hope everybody had a great weekend. We celebrated my daughters eighth birthday. I am still trying to find out where eight years went?! This is one of our favorite things to make together in the kitchen. My daughter just loves it. Layers of jello mixed with yogurt then shaped into whatever shape you want.
