Potato, Ham and Cheddar Fritatta

 I like my eggs fluffy and well risen when I make fritatta's. They are so easy to make. I love combining a bunch of ingredients like this, baking them off and wallah you have breakfast! Heck even lunch or dinner if you like. Just mix all the ingredients up and pop it in the oven in about 30 minutes its done. I hope everyone had a fabulous weekend!

2 cups frozen seasoned tater tots 
6 eggs
1/4 teaspoon salt 
1/2 teaspoon pepper
1/8 teaspoon oregano
1/4 cup half and half
1 teaspoon baking powder (this is the key to the fluffy rise)
1 cup grated cheddar cheese
1 cup diced ham

Preheat oven to 350 degrees F.

Heat tater tots in microwavable bowl about 2 minutes until defrosted. Mash the tots with a fork or potato masher until broken apart.

Heat 1/2 teaspoon canola oil over medium heat in bottom of an oven proof 8 inch skillet. Add the tots and cook for about 2 minutes. Remove from heat and set aside.

In a stand mixer add eggs, salt, pepper, oregano, half and half and baking powder. Mix in high power until eggs are thick and fluffy about 1 minute.  Add the cheddar cheese and ham mix well and pour into skillet over potatoes.

Bake at 350 degrees F for 20-30 minutes until middle is set. Serve immediately.
