Pork the other white meat? I love me some grilled chops. These came out pretty close to restaurant style grilled chops. They did not disappoint. The flavors came together nicely. Serve them along side my grilled sweet potatoes for a perfect pairing. Have a great weekend everyone!
1 pound boneless pork chops, thinly-cut (1/2-inch thick)
1 tablespoon honey
1 tablespoon olive oil
1 teaspoon lemon juice
1 teaspoon soy sauce
1/2 teaspoon ground chipotle pepper, (smoked or plain paprika can be used as an alternative)
In a medium sized bowl combine the honey, olive oil, lemon juice, soy sauce and ground chipotle pepper and whisk to combine. Add the pork to the marinade and let it sit for 15 minutes.
Preheat grill over medium high heat and brush with olive oil. Grill the pork for 8-9 minutes, turning once halfway through, until cooked to 145 degrees F.Remove the pork from the grill, tent it with foil and let it rest for 3 minutes.
