Raspberry and Peach Parfait for a Sunny Mother's Day Morning (Guest Post)



I would like to introduce to you the fabulous Ms. Kendra Thorton. Kendra was kind enough to do a Mothers Day guest post with this delicious Raspberry and Peach Parfait. Below is a her introduction.

Hi there my name is Kendra Thorton, I am a Travel advocate, TV spokesperson, PR businesswoman, proud wife and mama of 3. I am a long time travel expert who has been packing my bags and traveling the world since I was 3 months old! I've found my utmost desire in life is right here in my own home. This last post was inspired by my previous stay at a top Orlando hotel;  known for their fabulous and decadent treats! I have mixed my excitement for travel by bringing the taste of authentic cuisine to my own home with some of these unique recipes. Enjoy!



It's hard to believe that Mother's Day is coming up again soon, and it's time to begin enjoying the sights and scents of spring and summer fruits and flowers. I've traveled extensively and have always had a fabulous times sampling the cuisine of the places I've visited as well as met some fantastic people. I routinely find decadent, delicious and colorful treats from all over and always bring the best of them home to share with my friends and family. If you are ever in need of inspiration for tasty treats for special days, I am always happy to share. 

The most important thing that I have learned from my travels is that no matter how far you stray from home, family is always by your side in spirit and is what really matter. Because I believe that creating unique family memories is an excellent way to forge family bonds, it's a Thornton family tradition to make a memory or two in the kitchen every Mother's Day morning.




This raspberry and peach parfait that I discovered at Disney’s Boardwalk Inn while visiting Orlando with my family last year is the perfect way to start your Mother's Day morning off right. It's as easy to prepare as it is on the budget, and so delicious that you're eating ripe fruits that you've freshly picked from your garden. Sprinkle an extra serving of love over this and enjoy.


Peach and Raspberry Parfait:


Makes 4 – Prep. 5 min. – Total 20 min.


Ingredients:


- 2 peaches, cut into 2 ½ - inch pieces
- 1 ½ cups of raspberries
- 2 tablespoons sugar
- ½ lemon
- 1 pint vanilla ice cream (I like Slow Churned Edy’s Yogurt Blends)


Directions:


- In a mixing bowl, combine the peaches, raspberries, and sugar by giving them a toss or two (I don’t like using utensils incase of crushing the fruits.) Take your ½ lemon and squeeze the juice, lightly sprinkling some zest onto the top of the fruit. Give another toss.
- Let this sit for about 15-20 minutes
- Scoop the vanilla ice cream into bowls or fun cocktail glasses and top with the fruit mixture. (I usually do two scoops of both!)
