My Favorite Layered Salad

Tis the season for salads! Everyone wants to be thinner for the summer. I saw this salad on TV and fell in love. Let me just tell ya it did not disappoint  I had to  make a few adjustments but over all it was great! I hope all the mammies out there had a fantastic Mothers Day.

1/2 head Napa cabbage, shredded
1/2 head red cabbage, shredded
1 large cucumber, julienned
1-10-ounce bag shelled edamame, cooked
2 carrots, peeled and grated
1 green onion, finely sliced
1 small red onion, finely sliced

1 cups olive oil
1/2 cup honey or agave nector
2 cloves garlic, minced
Juice of 2 limes
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup cilantro, chopped

For the salad: In a large serving bowl, layer the cabbages, cucumber, edamame, carrots green and red onions.

For the dressing: Put the oil, cilantro, sugar, garlic, lime juice, salt and pepper in a large blender and blend until smooth.

Top each serving of salad with 2 tablespoons of the dressing.
