Chorizo Fundido


 The awesome folks over at Corazonas recently contacted me for a review of their tortilla chips. In perfect time for Cinco de Mayo! I was sent of their flavors. Lightly Salted, Black Bean and Cheese, Squeeze of Lime. Well they were by far the best tortilla chips I have even eaten. Not to mention they are healthy super healthy! My personal favorite was the Black Bean and cheese




Corazonas, are the makers of heart-healthy snacks infused with cholesterol-lowering plant sterols.

To give you a little background, Corazonas Tortilla Chips are infused with all-natural plant sterols, which are proven to lower bad cholesterol and fight heart disease. These light, crispy and heart-healthy Tortilla Chips offer 18g of whole grain, 3g of fiber and 0.5g of plant sterols per serving – the same cholesterol-lowering power as 28 pears, 23 onions or 33 green peppers!

So to go along with these awesome chips I made some dip. Oh so good dip for Cinco de Mayo. Chorizo and cheese all baked together OMG! It was really good, really really good. You must make this. 


Ingredients
1/2 pound chorizo, (usually 2 links to a package) casings removed
1 small onion, diced
1 jalapeno, seeded and diced
1 clove garlic, chopped
1 cup Monterey Jack cheese, shredded
1/2 cup Mozzarella cheese, shredded
1/4 cup Cheddar Jack cheese, shredded

Directions

Brown the chorizo in a pan over medium heat, breaking it apart as you go, cook for about 6 minutes. Remove chorizo with a slotted spoon and drain on paper towels. Leave the grease in the pan. 

In the same pan add the onion, jalapeno and cook until the onions are tender.

Add the garlic and cook until fragrant, about a minute.

Sprinkle on the cheese and run under the broiler until cheese is melted.

Sprinkle with green onions for garnish.
